It’s been crazy busy in the Little household this week. Jack started this week with his first football practices and seems to really be enjoying it. He’s really been focused on soccer for the last few years, so I think he’s having fun. We had a scare on Monday when my grandmother was hospitalized with a possible heart attack. We’ve been shuffling around to ensure she’s got someone with her in the hospital but also making sure dogs are cared for, folks are fed, and things are taken care of. While it looks like it wasn’t a heart attack, she’s still in the hospital as the doctors work to figure out what’s going on. She seems to be feeling better and is in good spirits, so we hope she’ll be able to go home soon.
Work on the Chinaberry House is continuing, just at a slow pace. The foundation is all blocked and filled with sand and we hope to start pouring concrete this week. It’s exciting to see it start to rise from the dirt!
This week, I’m pulling out the slow cooker for my Slow Cooker Beef and Noodles, adding some Roasted Brussels Sprouts with Mushrooms, and serving up one of my favorite quick and easy desserts – Lemonade Pies! And y’all have to check out the Helpful Hamburger Stroganoff from my friend Mandy over at South Your Mouth. That stuff looks so. dang. good.
As we head into the last week June (how is that even possible??) I want to remind you that you can handle 100% of what this week throws at you. I mean look at you! You’ve got a pretty good track record of hanging in there! Y’all have a good one!
Lots of folks think about hearty meals from the slow cooker during the winter months, but it's a great appliance for summer, too, since it doesn't heat up the entire kitchen! This super easy recipe for my Slow Cooker Beef and Noodles is one of my favorite ways to use the slow cooker. Super tender chunks of beef are served over egg noodles with a thick, delectable gravy that's packed with flavor!
These ain't yo' mama's Brussels, baby! Roasting them adds so much amazing flavor and throwing in some savory mushrooms doesn't hurt either! I've served these to self-professed Brussels sprout haters and these scored rave reviews!
I feel like I grew up on these super tasty, cool, and creamy Lemonade Pies. They're cheap, quick to make, and crazy easy! They only call for 4 ingredients. They're the perfect summer dessert!
What caught my eye this week...
I readily admit that we sometimes use a box of Hamburger Helper to get supper on the table quickly and easily, so the minute I saw this homemade Helpful Hamburger Stroganoff from South Your Mouth, I knew I wanted to give it a try! That creamy sauce has me drooling something fierce!
Keeping your grandmother, your family, and you in my thoughts. Here’s hoping that the doctors will quickly find out exactly what the problem is and can correct it/manage it easily.
Thank you for still taking the time to share recipes with us even though you have to be overwhelmed now.
Thank you so very much, Vickie!
Prayers for your Grandmother and everybody seeing after everything for her. Abundant blessings.
Linda
I am so wishing a great medical report for your grandmother, too. Hopefully, all she needs is some rest and pampering from the hospital staff. God does not give us an obstacle without a way to handle it! Keep your faith and all, including the new home, will work out. I am a true believer.
Thanks so much, Cheryl! You are correct!
Thanks you, Linda! I sure appreciate that!
