Hey, y’all! Welcome back to Sunday Supper!
Whew! What a week! We made the most of this first week of August by wrapping up summer and sending Jack back to school for his first few days of junior high! It’s been a whirlwind for sure. And forget those who say that sending them off on their first days of school gets easier when they’re older. My eyes may have leaked a little pulling away from the school after dropping him off for the first day. Just don’t tell him that. He’d be mortified! ????
Over at the Chinaberry House this week, the framers started working on the bonus room over the garage and started adding rafters for the roof! After weeks of slow progress, this part seems to be moving quickly!
We also began the search for a few new furniture pieces we’ll need once the house is finished. We’d been told to do this well in advance as there are tons of delays within the furniture industry and that advice was correct. The store told us that most things would take 6 to 7 months!
For supper one night this week, we’re giving the menu a little Mexican flavor. I’m going to pull out the slow cooker and make my recipe for super easy Slow Cooker Pork Carnitas. This recipe makes super tender, juicy, and crunchy carnitas that’s just perfect for tacos – but you could use the carnitas in burritos, quesadillas, over rice, or even in something like a burrito bowl. And speaking of rice, I’m making my super easy Salsa Rice to go with this. It’s got all the great flavor of the rice you find at your local Mexican restaurant. It might not be authentic Mexican rice, but it sure is delicious! And for dessert, I’m making one of my favorite poke cakes – my Tres Leches Poke Cake. This sheet cake starts with a boxed cake mix that’s then soaked in sweetened condensed milk, half and half, and coconut pudding. It’s then topped with real whipped cream and fresh fruit! Dang, my mouth is watering!
Also this week, I’m sharing another recipe that caught my eye! My friend Melissa over at Melissa’s Southern Style Kitchen shared her recipe for Air Fryer Baked Potatoes. And while I might not use my air fryer as much as I should, I can’t wait to pull that thing out of the cabinet to get to taste the crispy skin on these potatoes!

This Tres Leches Poke Cake is the perfect dessert for summer. It's cool, sweet, and super moist. I love topping it with some fresh fruit for even more flavor! Strawberries, kiwi, and pineapple are my favorite.

I don't use my air fryer a lot, but seeing these Air Fryer Baked Potatoes from Melissa at Melissa's Southern Style Kitchen sure made me want to pull it out of the cabinet! It's that crispy skin that I can't wait to try!
