Hey, friends! Welcome to this week’s edition of Sunday Supper! If you’re new around these parts, each week Sunday Supper gives me a chance to share a little about my life and to remind you of some of my favorite recipes to inspire you for the week ahead.
Whew what a week! Here lately it feels like each week can’t get any busier, but then the next one comes along to prove me wrong. ๐ In case you’ve not been following along, we’re building a new home and new test kitchen for Southern Bite and we’re (hopefully) less than a month from completion. Wow, it feels good to say that. Building during a pandemic has certainly presented some interesting challenges, but we’re so grateful to have had this opportunity. It’s taken us about 10 months to get to this point, so as you might imagine, we’re ready to get it done.
The moving date has been scheduled and we’ve already begun packing. You never really know how much junk you have until it’s time to move it all! ๐คฃ
There’s a chance the house might not be completely finished, but the test kitchen will. So, being that we’ve already sold the house we’re in now, we might be moving into the test kitchen for a week or two to give the builder time to finish things up. We’ve got our fingers crossed that won’t be the case, but at least we have a contingency plan.
The details of wrapping up a 10-month build have us pretty busy, but we’re doing our best to keep the delicious recipes coming out to y’all! This week we shared a brand new chili recipe that comes to Southern Bite by way of my friends at the Alabama Farmers Federation and one of the Alabama farm families that help to keep us fed and clothed. Nora Kelley’s Quick Chili is easy and calls for a few pantry staples and a little fresh produce. It’s the perfect chili recipe for those days when you don’t have 4 hours to allow chili to slow simmer.
For Sunday Supper this week, I’m sharing my Shortcut Cajun Chicken Pasta. It’s a great recipe for those busy weeknights when you just need to get something delicious and easy on the table.
And you can’t get much easier than my Garlic Parmesan Knots. These buttery garlic knots start with canned biscuits (of all things), but taste like so much more! You’ve GOT to try them!
And to satisfy your sweet tooth, I’m sharing this recipe for Blueberry Yum Yum. This old school layered dessert is perfect just the way it is, but you can also swap the blueberry pie filling out for another flavor pie filling, if you like!
And like always, I want to share a recipe that stopped me in my tracks this week. If you’ve got a little extra time, you might give LuLu’s Winter Gumbo a try! It comes to us via my friend Lucy Buffett, so you know it’s going to be good! Lucy owns three restaurants, has written several cookbooks, and yes – she’s that Buffett – as in Jimmy Buffett’s little sister.
Y’all, this week has been an emotional rollercoaster. A health scare with a loved one, stress from the build and move, Jack being moved back to virtual learning at school, and more have really put me through the ringer. Through it all though, I kept hearing that little voice in my head say, “just be grateful.”
Now, if you’ve been with me long, you know I write all the time about the importance of finding something to be grateful for each and every day. But it’s not easy. And I’ll be the first to admit it. But I kept my head up, things improved, and I’ve got that gratefulness in my heart once again.
I’m grateful for the path that lead me to create Southern Bite, I’m grateful for my family, I’m grateful for the opportunity to build our new home, and I’m grateful for each and every one of you. When you come back to the site each week – whether it’s to find something to cook or just to hang out and visit with me – you’re supporting my family and my dream. And I’m incredibly aware and eternally grateful because each of you are what makes Southern Bite such a blessing.

I totally understand your feeling of gratefulness even when weโre going through some tough stuff. Been there a few times, including just this past week.
I make your Garlic Knots all the time. So quick and easy, and we just love them. Now, I have to try the Cajun Chicken Pasta.
