As we get closer and closer to finishing up the Chinaberry House, my time with y’all might seem a little scarce. But bear with me, because we have some amazing stuff planned when we get settled in. We’re hoping to be about 4 weeks out now and things are moving at lightning speed. Finishing touches are going on outside, they’re moving dirt for the driveway, countertops went in the test kitchen, and they’re starting tile work! I’m going to do my best to get over there this weekend to get a few new shots of the progress. We’ve been so focused on getting things packed, making final decisions, and trying to keep the blog running, that we’ve just not had much time for anything else. It’s all going to be worth it though!
This week, I shared a recipe for Easy Corn Flake Cookies on the blog. These old school morsels are a lot like the old fashioned boiled oatmeal cookies, but are made with corn flakes instead of oatmeal. I’ve always loved them and knew they needed to be on the blog so that y’all could love them, too!
When I was a kid, I loved it when my mom would make these Porcupine Meatballs, so I’m sharing them also with you this week. They’re a lot like regular meatballs, but have instant rice in the mixture to give them a different flavor and texture. It’s the sauce that makes these super special, though. And it gets its signature flavor from an unexpected ingredient. And since Mom always served these with mashed potatoes, I’m sharing her Secret Ingredient Mashed Potatoes recipe to go with them.
When it comes to dessert, I’m sharing a favorite – Buttermilk Chocolate Cake. A very special friend shared this recipe with me a few years back and it’s been a favorite ever since.
And I can’t leave you without sharing a recipe that stopped me mid-scroll this week! This Instant Pot Spaghetti from my friend Robyn over at Add a Pinch looks like the perfect way to break in those new Instant Pots y’all got for Christmas! I mean, it all cooks right in the Instant Pot! How cool is that?!?! If you don’t know Robyn, you should. She’s just about as sweet as they come. And she’s an amazing cook, too! If you want to talk about chocolate cake, check out her Best Chocolate Cake Recipe {Ever}! I’m serious when I say it lives up to the hype!
