
What a week it has been! Our little Jack-Jack turned 13! He’s not so little anymore, but has grow into a handsome, intelligent, caring, and conscientious young man. So we spent a lot of time celebrating this milestone birthday with him, family, and friends. I think there were cupcakes, a cake, and even a cookie cake as a result of all the various celebrations and let’s just say the treadmill is calling my name!
Over at the Chinaberry House the siding is going up, plumbing is starting, and we spent Tuesday afternoon picking out cabinets. We had hoped to have windows this week, but we’ve had tons of rain and the truck carrying them couldn’t make it up the driveway. Hopefully that will happen this coming week.
On the blog this week, I shared my new recipe with my friends from Tony Chachere’s for my Spicy Creole Black-Eyed Peas! This version combines tomatoes with green chilis, Tony’s Creole Seasoning, bloody mary mix, and smoked ham hock to give boring old black-eyed peas a super delicious makeover!
This week I’m sharing my quick and easy recipe for my 6 ingredient lasagna. Seriously, six ingredients. And one of those is water! With just three of us, we always have leftovers and leftover lasagna is always a good thing.
My lasagna recipe calls for a jarred sauce, but if you’re feeling super industrious, you can whip up a batch of my basic marinara. It’s a flavor-packed sauce that is remarkably easy.
I’m also sharing my OREO Chewies. These sweet, chewy, delicious bar cookies start just like my Pecan Chewies but incorporate chunks of OREO cookies instead of pecans. Heather made some last weekend and reminded me of just how good these things are.
During a few minutes of casual Facebook scrolling this week, I ran across this Instant Pot Mississippi Roast from Damn Delicious. I already love a Mississippi Roast, but making it in the Instant Pot is going to mean super tender meat and more intense flavor. I can’t wait to try it.
The nice folks with the Alabama Peanut Producers Association have invited me to take part in their peanut harvest tour this week, so I’ll be heading down to south Alabama for few days and plan to share some of the journey with y’all on my social channels. If you're feeling a little industrious this weekend, you can forgo the jarred sauce and whip up some homemade marinara. No, seriously. It's much easier than you think. I usually double the batch and freeze some when I make this for easy weeknight meals.
Last weekend we ended up with a package of OREOs in the house and Heather made these OREO Chewies. I had nearly forgotten about them! They're like cookies and cream blondies! And while the OREOs in the photo are the halloween ones, any regular OREO should work just fine.

I'm a big fan of a Mississippi Roast and this Instant Pot version from Chungah over at Damn Delicious sure looks divine! The thing I love about doing a roast like this is all the possibilities for the leftovers.
