If you’re new around these parts, I dedicate a post each week, that I call Sunday Supper, to catching you up on what’s been happening in my world and offer up a little recipe inspiration. It’s sort of like the old days of blogging. Anyway, let’s jump in…
I hope y’all all had an amazing Thanksgiving surrounded by the folks you love. We certainly did! And last weekend, I turned 40! That’s why you didn’t get a Sunday Supper email from me last week. After all the holiday festivities, I just decided to spend some time with family and friends and celebrate my big day in a pretty low-key style. It was very relaxing.
After a few weeks without much excitement, things have really jumped into full gear over at the Chinaberry House! Sheet rock went up last week, they’ve been mudding this week, and brick is starting to cover the outside. It looks absolutely amazing and we’re so excited with our brick choice.
The hint of color in the Silo Square brick from Cherokee Brick was the perfect choice! (If you have no idea what I’m talking about with this Chinaberry Stuff, we’re building our dream home and a new Southern Bite test kitchen and studio. Click here to get all the details.)
When it comes to food, I’m sharing some of my favorites. To start, this is my favorite 5 ingredient recipe – my 5 Ingredient Beef Enchiladas. Everyone always overlooks these, but when they finally give them a chance, they’re always impressed. Using salsa as a shortcut adds tomatoes, peppers, onions, garlic and more (and tons of flavor!) to the meat mixture without any work at all.
With that, I’m sharing my Easiest Mexican Inspired Salsa Rice! This stuff tastes just like the rice at my favorite local Mexican restaurant!
For something sweet, I’m sharing a recipe for Chewy Sugar Cookies that tastes just like the sugar cookies at Great American Cookie Company. I just love those things. In fact, one of my birthday cakes was a giant sugar cookie cake from Great American Cookies!
And if you love those yummy Swedish meatballs from Ikea, you’re going to want to check out this delicious copycat recipe that my friend Brenda from A Farm Girl Dabbles shared recently.
As we head into the holiday season, I know it’s not always a season of joy for everyone. As I get older, I often feel the blues starting to creep in this time of year. For me, one thing that helps me battle seasonal depression is working to find a way to be of service to others.
Maybe it’s dropping off some donations to your local food bank. Perhaps it’s helping to provide Christmas gifts for folks whose can’t afford it. Maybe it’s paying for someone’s coffee at Starbucks. Or even yet, maybe it’s just offering someone a smile. Things like this are really at core of what this holiday is all about and when I know I’m able to help someone else, it always works to put my issues in perspective.

A true Southern Gentleman – courageous enough to put himself at risk to the opinionated public that hides behind the shadow of a faceless opinion of someone they do not know. Stacey – thank you for your honesty, your southern manners, for sharing your new home plans with us, and your truly southern recipes like I grew up with. It’s really refreshing to get similar recipes from the south and different versions of the wonderful food my mother and grandmother cooked for us. Good food always brought us together to share our lives with each other. Some of my happiest memories are the family reunions when we all sat at a large table, catching up on family news. Even the kid’s table was fun – and close enough to the adults to hear the news. I’m 83 now and those memories still bring me joy.
