  1. Thanks and HELP!
Dear hubby asked for a chocolate pie, haven’t made one in years so thank goodness your email arrived with Thanksgiving desserts and Chocolate Chess Pie👍.
However, I need help with my pie education. I’m Bama born, so of course pies and Chess pie/cake were at all get togethers, but I don’t know the REAL difference in pie and chess pie. When I searched the net, it said Chess pie had cornMEAL? My search however did not find a chocolate chess pie recipe with with cornmeal. (Don’t think I would want to eat chocolate cornmeal anyway.) Also, what is the difference in chess pie and chess cake?
    Thanks!

    1. There are essentially 3 main types of pie: custard, fruit, and cream. Chess pies fall in the custard category. Yes, many old school chess pie recipes call for cornmeal – but not all of them. Cornmeal helps to thicken the pie and gives it a unique texture. I do include it in some recipes, and not in others – like this one. I don’t like the flavor of the cornmeal in the chocolate version, but it’s great in the basic recipe. If by chess cake you’re referring to recipes like chess bars or gooey butter cake, they are similar in terms of the flavor and texture. They both have that gooey thick filling, but don’t have a crust, per se.

      1. Thank you! I may be saved from embarrassing my Southern heritage 😉 So appreciative to rely on your delicious recipes and knowledge.
