Last weekend, I got to host my family and friends for an amazing barbecue. We filled the table with tons of food that you’d expect at a summertime barbecue and a few things you might not.
To start, we had some amazing smoked ribs and pulled pork. I don’t often pull out the smoker, but when I do, I like to use it to its full advantage. So I smoked a 10 pound Boston Butt and 3 racks of St. Louis Style ribs. I used Stubb’s Pork Rub on the ribs and the butt and injected the butt with Stubb’s Pork Marinade. Once rubbed, I like to wrap them tightly in plastic wrap and allow them to hang out in the fridge for about 24 hours to allow all that amazing flavor to get in there. I also used Stubb’s Pitmaster Blends Smoking Woods Chips this time. It’s a blend of oak, hickory, and apple woods that was perfect for the meat. I’m not sure I’ll use any other woods chips now that I’ve tried these!
This Secret Ingredient Fruit Salad is a family favorite and one that always shows up on the table during the warmer months. You can use just about any fruit you like and it’s super simple.
New this time we did some AMAZING grilled cauliflower steaks. I cut two thick steaks from the middle of the cauliflower head and marinated them for about 30 minutes in Stubb’s Sweet Black Pepper Anytime Sauce.
Then grilled them over medium-high heat for 3 to 4 minutes on each side. They were amazing. My Dad just loved them. The sauce really gave it a spicy kick!
Taking advantage of that grill being hot, I also grilled up some of my Amazingly Easy Grilled Corn. When it was done, I drizzle some melted butter over each ear and sprinkled a little Bar-B-Q Spice Rub on top for added flavor.
We ended up with a seriously amazing spread that also included cole slaw, baked beans, Crusty Cream Cheese Pound Cake with sliced peaches, homemade ice cream, and an incredible selection of Stubb’s Bar-B-Que Sauce to go around.
