Howdy, y’all! I feel like we haven’t really chatted in months. Things have just been crazy around our house and though they seem to be winding down some, they are just getting started in other respects. It seems like it was just a few months ago that I was posting about Poppy Seed Chicken Casserole and how my wife was going back to school to become a nurse practitioner. Now in just less than two weeks she’ll graduate from Auburn. (War Eagle!)
It’s almost unbelievable – man, how times flies! She’s even got her new job all lined up. I’m so proud of that girl I could just squeal. Now comes the whole deal of passing her boards. She’s been about elbow-deep in books all week and will be that way until the exam next Thursday. Y’all do me a favor and say a little prayer for her. I’d appreciate it and I know she would, too.
Here’s a quick and easy broccoli casserole that we just love at our house! Frozen broccoli, cheese, butter crackers, and a creamy sauce combine to create a family favorite! There’s also a little Worcestershire sauce in there to amp up the savoriness, but it doesn’t taste strongly of it. You can always leave it out, if you wish.
This dish is a great complement to almost any meal and it’s easy. It’s a win-win!

I am making it for the first time. It seems pretty simple and I love all the ingredients.
I will let you know if my family enjoyed it.
Looking forward to hearing how it turned out!

I am about to make this for a large crowd, and need an answer before I proceed: is the 10.75oz can of CONCENTRATED mushroom soup, or READY TO SERVE mushroom soup?
This is condensed cream of mushroom soup.

Fantastic! This is a great addition to our holiday table. Heck, you don’t need a holiday to have this. I am making it today!!
I agree, Beverly!

This sounded so good and I thought it would be another good way to eat broccoli. I followed directions to a t. I was very disappointed in how it turned outโฆ didnโt think it was even worth the effort.
Can you tell me what you were unhappy with?

Thanks for such a great recipe. I made this today when we had friends over for dinner. Usually, I do not try out a recipe I am making for the first time when friends come over for dinner. However, I knew I could trust your recipe. You have never let us down. This was just delicious. It was a hit with the kids, young adults, and older crowd. There is no need to tweak this recipe. No one will be disappointed if is made as you have instructed. This will now be added to the Thanksgiving meal table as well.
I am so glad this worked out and everyone enjoyed it! Thanks so much for the vote of confidence, as well!

Enjoy! Happy Thanksgiving!

This was not a family favorite. No eggs in directions but listed in ingredients. Won’t make this again.
The eggs were removed in an edit and I just mistakenly left them in the instructions part. Sorry to hear you didn’t enjoy it.

No eggs listed in ingredient list but they are mentioned in the instructions???
They were removed in a recipe edit and I failed to remove them from the instructions. Sorry for the confusion.

I got all the way to the cracker part…I knew I had a box of Ritz in the pantry…or so I thought. My husband…and kids left me like 6 crackers. *IDEA* I had some Nacho Dorito snack bags in there! I crunched them up and put them on top! Gotta have crispy on a casserole! Thanks for the recipe! Oh and I didn’t have cream of mushroom soup, but I had cream of chicken. This is going to be interesting!
I bet it turned out delicious!!

Hi Stacey!
I know I’m late to the party, but I hope everything turned out well for your wife!
I want to know if I can make this scrumptious casserole in advance, and freeze, uncooked, until Thanksgiving. Of course I wouldn’t top with the ritz crackers until I bake it. Is this possible? Just trying to make the big day a little easier!
Thank you!
I think that should work just fine! Enjoy!

This sounds great – I can’t wait to try it. I make a broccoli casserole which is similar but a little different. No ritz crackers (which sound delicious) and I add hot Italian sausage and use mozzarella instead of cheddar. I can’t wait to try your version but will still probably add the sausage!
I can’t wait to try YOUR recipe! The sausage sounds GREAT in this! Yum Yum Yum!
Karen
Yum; thanks for sharing your recipe for this. All the best to your wife; what a wonderful accomplishment.
Thanks, Karen!

Another great recipe. I can’t wait to make this one. I will say a little prayer for your wife for her to pass her board exams. God is in control and hears what we ask for. How can she go wrong with God as her pilot on her exam day. If it is meant to be, nothing will stop her from passing. I Believe!!!!
You are so right! I just hope the Good Lord sees it fit that she pass this first time and not have to drag it all out! Thanks for the prayers!

I see no reason why I wouldn’t enjoy this recipe, Stacey! Everytime I make it I will think of that SNL video, too!! Will keep your wife and family in my prayers. BTW…go ahead and squeal! You have every right in the world to be proud of your wife. 8^D
Sqeeeeeeeeeeeaaaaaaaallllll! Choppin’ broccolay!
Tina
Looks so delicious!
Praying for your family at this exciting(and nerve racking)time!
Thanks, Tina! You are always so sweet!

I have made a similar casserole for years…. the only difference is that I use cheddar cheese soup instead of cream of mushroom and buttered bread crumbs instead of crackers, but I would love to try this one…. need a change… maybe my kids (who are all grown) will go crazy over the changes….. who knows
Your version sounds delish, too!
