Cake Mix Cookies and Stacey and the Terrible, Horrible, No Good, Very Bad Day

Have you ever just had one of those days?   You know… one of the ones where you know you should just go home and get back in bed and wait until tomorrow???  Last Wednesday was one of those days…

Waking up, it seemed it would be just like any other random day.  As usual I had to pry myself out of bed.  (Saying that I am not a morning person is an understatement.  I abhor mornings.)  I cut myself shaving, but no biggie. It happens all the time.  Jack was feeling a little under the weather, so we had been giving him some medicine for his cough.  Fully dressed now, I went into the kitchen to get his stuff ready for the day and draw up his medicine (we give it to him via syringe) and managed to splatter red Mucinex D all over my yellow shirt.  Calmly, I changed.  Next we’re all packed into the car to take J to daycare when I realize I forgot to take the trash to the street.  I stop, jump out of the car, drag the can to the street to find out that the can was filled with ants and I’m now covered.  I’m jumping around the yard like I’m in  Lord of the Dance trying to get them all off of me.  All the while, Jack is in the car laughing so hard he can hardly catch his breath because  Daddy is being silly.  We get to daycare and get him dropped off.  I had to go to Birmingham Wednesday for a work function and I was supposed to meet my co-worker at Target so we could ride together.  I’m now running late to meet her.  I finally get there to meet her when she calls to tell me she’s now running late because her sister parked behind her and then lost her keys.  I’m not sure how things like that can happen so quickly.  The keys get found and she starts to make her way.  I decide, while I’m waiting, to run over and get some gas.  At the station, I’m patiently waiting for my tank to fill when gas starts spraying (and I do mean spraying) like a fire hose out of my car.  The little “clicky” thing that holds the handle up didn’t stop when the tank was full and instead spewed gas all over my car and the ground.  Lost about 2.5 gallons in that little episode.  I get it cleaned up and get back to meet my coworker.  We decide to run by and get some breakfast.  As I open my sausage, egg, and cheese biscuit… I find a huge black hair in my eggs.  By this point, I’m just starting to laugh because I can’t believe all of this is really happening.  I’ll sum up the rest of the day like this:  traveling was a nightmare because of the terrible thunderstorms both up there and back, the event got canceled, at lunch I spilled stuff everywhere and the waitress spilled food all over me.  I just stopped thinking after that… blocked the rest of the day from memory.  Next thing I remember is waking up Thursday morning… and just refusing to shave.  All of this to say, some days you just need something really easy.  This is about as easy as it gets.

This recipe is from a very special old friend that I basically grew up with.  She lived across the street from us then and really became a big sister to me.  She’s one of those people that no matter how long you’ve been apart, seeing them again is like that time apart never existed.  Every time I make these, I’m reminded of all the fun, crazy things we used to do!  I love the way food connects us like that…

Ingredients

  • 1 box any flavor cake mix (my favorite is strawberry)
  • 1 egg
  • 1 – 8oz Cool Whip
  • 1 cup powdered sugar

Directions

  1. Preheat oven to 325 degrees.
  2. Combine first 3 ingredients in a large bowl; stir until just mixed.
  3. Place powdered sugar in a bowl and drop spoonfuls of cookie batter into powdered sugar.  Roll to coat and transfer onto a greased cookie sheet.
  4. Bake for 13 to 14 minutes.

  2. Very late in reading your humorous story about your very bad day, but I did get a laugh out of it as we all have “those days” every now and then. It definitely is better to share memories of your horrible day with friends because you know that they will respond with laughter and maybe even make you laugh, lol!

  4. Thanks for the recipe for Cake Mix Cookies. Please clarify what “Cool Whip” actually is. I get that powdered sugar is icing sugar in our Australian recipe language but the Cool Whip has me beat.
    I look forward to many more yummy recipes.

    I’m so sorry for your Terrible, Horrible, No Good, Very Bad Day!! We all have them but it sounds like you got more than your share all together!!! It made me smile because I just sent the book Alexander and the Terrible, Horrible, No Good, Very Bad Day book to my son in college. I pulled it off his bookshelf and added it to his latest care package to remind him that everyone has a bad day once in a while! Now about these cookies!! I made them a week ago and they were delightful!! So easy and so light and airy! I made lemon because we love lemon cookies!! Thanks so much for sharing!!
