Easy Peasy Cheesy Muffins

Y’all are going to have to bear with me for a few days.  I’ve got to be a daddy, a husband, a son, and a grandson for a bit.  But don’t go too far, because I’ll have some new stuff for you before you know it.  I love y’all and do me a favor, if you’ve still got grandparents living, do me a favor and give them a call.

 

 

 

 

This is a super-duper simple and easy way to add a sweet little touch to any meal.  I love the sweet muffin combined with the sharp cheddar – I think it’s that whole sweet and salty obsession I have.

 

Ingredients

  • 1 box Jiffy Golden Yellow Cake Mix
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1 cup shredded sharp cheddar cheese

 

Directions

  1. In a large bowl combine cake mix, salt, egg, and milk.  Stir well to combine.
  2. Stir in cheese.
  3. Spoon into mini muffin pans (about halfway full).  
  4. Bake at 350 degrees F for 15 to 20 minutes or until golden and firm.  Makes about 36 mini muffins.

    I like to mix one Jiffy yellow cake mix and one Jiffy cornmeal muffin mix …add the ingredients that each asks for, a couple TBS melted butter, and approximately 1/2 tsp Durkee butter salt…can be put in muffin pan (makes at least 12) or in a 9×13 cake pan (Pam sprayed). The mixes each call for a different temp, so I go right in between and bake till golden brown on edges and slightly pulling away from edges of the pan. Also do toothpick test in center of cake or muffin. Everyone raves about my cornbread…never tell them how easy it is. Kmcee

      I have! I like it with the cake mix better, but with the cornbread mix is good as well.

      Of course! Just add a few minutes (4 or 5) to the cook time and you should be just fine. Enjoy!
