Company Potatoes

These potatoes are good enough for company but easy enough for family.  The fresh potatoes are a great departure from the typical hash brown casserole and offer a different texture and flavor.  The grating is totally worth the extra effort.

Ingredients

  • 6 Russet potatoes
  • 1 cup cheddar cheese
  • 1 can cream of mushroom soup
  • 1 teaspoon garlic powder
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons Ranch dressing mix (not pictured)
  • 2 tablespoons bread crumbs (also not pictured, sorry!)
  • 3 tablespoons butter, melted

Instructions

  1. Peel and grate potatoes on the large side of a box grater.
  2. Combine potatoes, cheese, mushroom soup, garlic powder, sour cream, mayonnaise, salt, pepper, and Ranch dressing mix in a large bowl. Mix well. (Note on Ranch dressing mix: I use a small canister of ranch dressing mix that you can now buy.  If you do not have one of these puppies, you can just use about 2 tablespoons out of a packet mix.  A packet mix contains about 3 tablespoons, so you won’t need it all.)
  3. Turn out into a greased 9×13 casserole dish.  Sprinkle with bread crumbs and drizzle with melted butter.
  4. Bake uncovered at 350 degrees F for 50 to 60 minutes.

  1. All I have s small yellow potatoes, and I’m not sure how many to use… Do you know how many cups of potatoes for this recipe?

  2. Stacey, these potatoes were soooo delicious! I made them for dinner tonight, along with some breaded pork chops baked in the oven, and garlicky sautéed spinach. What a great dinner. My husband ate a ton of the potatoes (three servings, but who’s counting, lol). I will definitely make these again and again, and I think it would be a great dish for the holidays. I used panko breadcrumbs, by the way.

    Also, thanks for the tip about that large canister of the Hidden Valley Ranch dressing mix. Although I just made this recipe tonight I did find this post a couple of months ago and it made me look for that large canister instead of buying the individual packets at my local supermarket or the four packet box at WalMart. Btw, I was using so much of it because we sort of became addicted to your Bacon Ranch Potato Salad over the summer. I’ve made it so many times.

    Anyway, in case anyone is interested, that large (16 oz) canister of Hidden Valley Ranch dressing mix is a very good price at WalMart, but I found it for an even better price at BJ”s Wholesale Club (they’re like Costco, or Sam’s Club). Pus, I had a BJ’s coupon for it, so the price was really great.

    1. Unfortunately, I can’t recommend leaving the mayo out. You could try substituting something like greek yogurt, but I’m not sure what the result will be.

  3. I tried your recipe and instead of putting bread crumbs on top I used crushed french fried onion rings mixed with some grated parmasan cheese. It was fabulous! Thank you so much for this recipe, Stacey!

  4. These look delicious, I make a potato casserole similar to this. But can’t wait too try these. I am guessing you used a 9 x 13 in. casserole dish, didn’t say but that’s what it looked like you used in your pics. And also for the bread crumbs, is that just regular bread crumbs or could you use Panko bread crumbs? Thanks for a nice looking recipe. Will let you know how the crew likes them, (sure they will) 🙂
