I’m ba-ack! Woo-hoo! My jury duty service is over. To be honest it was an enlightening and frightening experience, but I’m glad to be able to to my part. And I’m glad it’s over. As I told you before, I usually blog late at night, after the fam is asleep and the house is quiet. But, last week, late at night wasn’t an option for me. It just about wore me out. I was just too tired. So I appreciate y’all’s patience with not having any recipes last week. But, I’m back on schedule this week and happy to bring you some new posts.
Butterscotch haystacks are one of my wife’s most favorite treats. Each year at Christmas Laura’s mom, Rita – we call her Aunt Reet, makes Heather a batch. It’s kind of become a tradition and I wouldn’t touch making those for a million bucks. Do you have recipes like that? Something that someone has always made and though you’re completely capable of doing it, you don’t because you don’t want to ruin that tradition. It just wouldn’t be the same.
Well, here’s another take on haystacks… only made with corn flakes. They’re light, crispy, tasty, and the best part… super easy!
- 1 package butterscotch morsels (11 oz)
- 3/4 cup peanut butter
- 4 cup Corn Flakes
- 1 cup peanuts
Directions
- Combine butterscotch morsels and peanut butter in a small sauce pan and melt over low heat, stirring frequently. (I advise against the use of the microwave here – a few bad experiences with butterscotch morsels – I’m just sayin’.)
- Once melted, pour over corn flakes and peanuts in a large bowl. Stir gently to combine.
- Drop onto wax paper and allow to cool completely.

Try with mini marshmallows instead of peanuts, it’s AWESOME!
Love these! I got this recipe a few years ago from a friend. It didn’t have the peanuts, though. I’ll have to add them next time. Have you ever frozen them? We had them at a New Year’s Eve party, and the house was extremely hot. My friend put them in the freezer and kept telling us to wait ’til they were defrosted. Not a chance!! These are AMAZING right out of the freezer. Can’t wait to make these again!
These are great! I made them today and really love the peanut buttery flavor with the butterscotch. The texture is so nice to eat! I made them side-by-side with a recipe that uses chow mein noodles and pretzels, and yours was definitely my favorite. Yum!!!!!!!!!!!!!!!!!!

Hi, these look so yummy…but I hate peanutbutter, do they have a peanutbutter taste, or does the butterscotch take the lead?

There is certainly a peanut butter flavor, but I think the butterscotch is more prominent.

My grandmother used to make these with chocolate chips and butterscotch chips. Don’t remember if there was peanut butter in them though. All I know is that they were delicious!
My Hubby makes these every year at christmas time love these an you get the protien of the peanut butter . Best cookies ever.. Thanks for the recipe
hey there… peanut allergies for most of my family. so I’ve tried this with almond butter. it tastes really good out of the bowl, waiting to see how it sets up. 😀

I made these this morning. I miss read the recipe and added 1 cup of peanut butter instaed of 3/4 will this keep them from setting up? They are still soft and not holding together. But, they do taste great.
Oh no! If you find that they haven’t set up within a couple hours, you can always pop them in the refrigerator to get them to set and store them in there too. Good luck!

I keep them in the freezer, and they’re just fantastic. You grab one and pop it into your mouth. They keep longer (that is, if people in your house are crazy or don’t know about them).

Adding peanuts to my grocery list…already set with the other ingredients! Yum! I make Butterscotch Crunches(what my Mom always called them)…probably the same cookie as the Haystacks!!

I made the Butterscotch Cornflake cookies this morning! They are so good! My husband is thrilled because they are gluten free and he can have them!

I know this was a few years ago..but just found this online recipe. How did your gluten free husband do with these? I ask because I noticed Nestlé butterscotch morsels have barley protein. 🙁
I have found it easier to mix this type treat (those using cereal) if I spread the cereal, peanuts, coconut, etc on a sheet pan and warm in a 250-300F oven for 10 to 15 minutes. Since everything is closer to the same temp the mix does not set up so fast.
