This past weekend, I had the great honor of accompanying my dear friend Christy Jordan from Southern Plate to the Alabama Book Festival just over the river in Montgomery. It was another opportunity to see how gracious she is to her readers and followers. People were constantly stopping her and asking to have her sign their books and each time she did so with the same enthusiasm as if it were the first time anyone had asked. She is truly the epitome of Southern grace and charm, and I just love her for it. Well, several weeks ago, Christy launched a new online store on her site filled with Southern Plate themed ware. One magnet got my attention the minute I saw it. It simply says, “Life is short. Visit your Grandma.” I was instantly enthralled with it. How simple, but how true. Those of us who are fortunate enough to still have our grandmothers need to be reminded of how important they are. But unfortunately, for many, it takes losing someone to realize how short life really is and how important that person was. So, folks, here’s your wake-up call! Life IS short no matter how you look at it. SO, go visit your Grandma! (Or at least give her a call, please.)

Easter is now just days away and if you’re looking for a great easy recipe to complement your Easter menu, this is a must try. It might even convince your kids to eat green beans!
- 2 – 14 1/2 oz cans of whole green beans
- 6 to 8 slices of thinly sliced bacon
- 1 packet dry onion soup mix
- 1/2 cup water
Directions
- Preheat the oven to 400 degrees F. and lightly spray a 9×13 baking dish with non-stick cooking spray.
- Drain green beans and cut bacon slices both horizontally and vertically so that one slice yields 4 pieces. I have found that a good pair of kitchen shears works best here.
- Take 4 to 6 green beans and wrap them with a piece of bacon and make a knot. Be sure to bring the “tails” of the bacon to the top and bottom as shown so it will cook evenly.
- Line baking dish with bundles. Mix onion soup mix with 1/2 cup water and pour over bundles.
- Bake uncovered for 30 minutes or until bacon is crisp. Depending on your oven you might need to put the oven on broil for the last few minutes to get the bacon crispy.

My daughter and I met Christy at the festival. She certainly is a sweet southern gal! My daughter and I love her dishpan cookies so much, my daughter had her sign the red dhishpan we use to mix the batter in. Christy didn’t bat an eye… she just signed away!

My grandmother (Nanny) had her own green bean bundle recipe. Her’s called for 3-4 cans of green beans and a pound of bacon cut in half vertically. Instead of the onion soup mix, she poured a 16 oz bottle of French salad dressing over the bundles. This is about the only way some of my family will eat green beans!

This is a family favorite and guests always ask for the recipe. It’s a little different than yours !
4 cans whole green beans
1 cup brown sugar
1 tsp dry mustard
Drain beans. Save the juice and add mustard and brown sugar to it. Bundle 7-8 beans in 1/3 piece of bacon. Place in oven proof dish and bake at 350 for about an hour.
