Tips for Success
- Line Your Pan: Trust me, don’t skip the aluminum foil. It makes cleanup a breeze and ensures you can lift the toffee out easily for breaking into pieces.
- Spread It Evenly: When you pour the toffee over the graham crackers, work quickly to spread it out while it’s still hot. A spatula sprayed with nonstick cooking spray can make this step easier.

Easy Graham Cracker Toffee
Ingredients
- 1 (14.4-ounce) box graham crackers
- 1 cup unsalted butter
- 1 cup firmly packed light brown sugar
- 1 cup chopped pecans
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F. Line a jelly roll pan (10"x15"x1") with aluminum foil. Lightly spray the foil with nonstick cooking spray.
- Place a single layer of graham crackers on the pan, covering it from edge to edge. You can break them up however you like. I break mine into halves, then some into quarters to fill the pan. I used about 15 whole crackers to fill my pan.
- In a medium-size pot over medium-high heat, combine the butter, and brown sugar. Heat until bubbles just start to appear, stirring constantly. Boil for 3 minutes. Remove from the heat and stir in the vanilla and pecans. Pour the mixture evenly over the graham crackers. Carefully spread to cover as many crackers as you can.
- Bake for 5 minutes. Remove from the oven and cool completely before breaking into pieces. Store in an airtight container.

Hi! I only have salted butter on hand. Do you think it would turn out to be too salty if I used this?

If you add nuts to mixture, you won’t be able to spread it over the crackers without a total mess. Crackers will move and it’ll look like a car wreck. Yes, I sprayed a spatula with pam. The toffee is too heavy for the crackers. I threw away half the crackers that didn’t get covered.
I’ve made these a bunch of times, always add nuts, and the toffee is usually pourable enough that there’s hardly any spreading at all. If it was so thick it had to be smeared on, something was off—either it cooked a little too long or cooled too much before pouring; next time, pour it on right away while it’s still hot and flowing, and make sure the crackers are packed in tight so they don’t slide around.

It does sound like the toffee might not have cooked quite long enough. The only difference with mine is that after pouring on the toffee I sprinkle with chocolate chips, put it in the oven for a few minutes to melt the chips, then spread them around the top with a flat edge (i.e. spatula or knife).
