BBQ Chicken Tostadas
Ingredients
- 1 carton Farm Rich Smokehouse Pulled Chicken BBQ
- 12 corn tortillas
- Vegetable oil for frying
- Kosher salt
- 2 (15-ounce) cans refried black beans
- ½ head iceberg lettuce sliced thin and seasoned with salt and a little vinegar
- 2 medium tomatoes chopped
- 8 ounces queso fresco crumbled (or substitute shredded Monterey jack cheese)
- 2 limes sliced
Instructions
- Prepare Pulled Chicken BBQ according to package directions and keep warm.
- In a small saucepan, stir together the refried beans and 2 tablespoons water. Cook over low heat until warmed through. Keep warm adding more water if necessary for a thick paste like consistency.
- Pour enough oil into a frying pan so that you have a 1/2-inch layer of oil. Heat on medium high heat until sizzling but not smoking. Have a tray lined with paper towels ready.
- Working with one tortilla at a time, slide it into the hot oil and cook until golden brown on both sides. Remove with tongs to the paper towels and sprinkle with salt. Repeat with the remaining tortillas.
- To assemble tostadas: Spread a layer of refried beans on each tortilla. Top each with BBQ chicken, lettuce, tomatoes and queso fresco. Serve warm with lime wedges to squeeze over before eating.

I always make my pasta salad for the 4th! Penne pasta, mayo, ranch dressing powder, cherry tomatoes, broccoli, red and green bell peppers, carrots, and crabb meat! SO yummy 🙂
The first things I reach for on the forth are deviled eggs and grilled corn on the cob.
We love making baby back ribs!
Love cold pasta salad. ..great as side or keep in fridge all summer.
1 box of tri-color rotini pasta
1/2 of a medium red onion, chopped
1 (6 ounce) can black olives
1 (16 ounce) bottle Italian-style salad dressing ( I love Newman’s Own Organic Tuscan Italian Dressing)
1 small bag of baby carrots
2 cups of broccoli florets
1 package cherry tomatoes rinsed (keep whole)
Cook pasta as directed on box
Cook broccoli florets & carrots until al dente. Chop if needed (I like bite size peices)
Mix carrots, tomatoes, broccoli, black olives and red onion together in large bowl. Add the cooled pasta and mix together. Pour half the bottle of dressing over mixture. Mix well and serve cold.
You can add, chicken or salami and cheese the next day for quick meal.

I love BBQ pulled pork and hot tamales for the fourth!!!
I grill pork slowly over the day in my big green egg for pulled pork. It’s delicious with my homemade BBQ sauce.
My daughter and I love trying out new recipes every year. Our favorite from last year was the Mustard-Glazed Mushroom Burger
this year will be having BBQ pork which i will start ncooking on the 3rd. We will be enjoying this as we watch the fireworks from my backyard. Friends and family will all be there. Celebrate the Fourth!!

It’s not 4th of July without my grandmother’s famous Boston Baked Beans. I take a full day preparing them with lots of brown sugar, bacon and love. I even cook them in her now antique bean pot.
I like to stick to the basics on the Fourth. Hamburgers, hot dogs, etc.
My favorite 4th of July meal is grilled burgers seasoned with Southern Flavor and Dale’s low-sodium sauce, southern-style baked beans, red-skin potato salad, and Stacey’s fruit salad!

Jail House Rock Cake
Ingredients:
White cake mix
8oz can crushed pineapple
1 c. sugar
8oz pkg Cream Cheese
1/2 c. butter, softened
3 c. powdered sugar
1 tsp. vanilla
2-3 c crushed pecans
Directions:
Bake a white cake, cool and poke holes in it. Boil crushed pineapple with juice and 1cup of sugar then pour over cool cake. In large bowl mix cream cheese, butter, powdered sugar. Add vanilla and crushed pecans, mix good and put on cake.
This is sooooo good!

We will be making campstew , bbq and homemade ice cream along with any other requests.
July 4th is my family reunion on my grandfathers side.. eight brothers, they have all passed away but we cousins love getting together and visit. This year will be a fish fry with all the traditional sides. I will prepare graham delights (a must). Divide a sleeve of graham crackers into 4ths and place on cookie sheet with a lip . Melt together 1 stick margarine, 1 stick of butter and 1/2 cup of sugar. cook for 2 minutes and add 1/2 cup coconut, 1/2 cup sliced almonds, 1/2 cup of pecans. spoon over graham crackers and bake for at 300 10-15 min . remove immediately …enjoy. Happy 4th of July !
I love smores made with chocolate chip cookies, marshmallows, herseys, wrapped in foil and thrown on the grill for 10 min. so easy so good.

In addition to the usual burgers and potato salad, my wife make something called cherries in the snow, which is essentially a cheesecake, but a little creamier.

We like a Southwestern cheese dip that goes well with cut up veggies and also with corn chips.
