Thanksgiving will be a little different in our neck of the woods this year. Nearly every year past has found us at my grandparent’s to celebrate. But this year, unfortunately, we won’t be making that trip. Heather’s on call this Thanksgiving and we have to be within 30 minutes of the hospital if she gets called in, so that won’t permit the hour and half travel to my grandparent’s. And while I’m certainly bummed about not being with my extended family on Thanksgiving, I’m actually kind of excited about preparing a whole Thanksgiving meal all by myself – and a little overwhelmed. The truth is, this will, more than likely, be the only time it will ever be just the three of us for Thanksgiving. So, I’m headed out to scout a small turkey and plan the sides for our little celebration. I wish you all the most wonderful of Thanksgivings and encourage you to stop and just be thankful… breath in deep and just take in how truly fortunate we all are – whether we’re celebrating with a fabulous gourmet meal or some chicken McNuggets. We each should be thankful just to be able to celebrate another year.

Happy Thanksgiving! There will just be three of us this year also. Two of my children are too far away. I go to the Honey Baked Ham store and get a roasted turkey breast. It’s delicious and just the right size. Then I spend all my time making great side dishes!
