This easy Graham Cracker Toffee is the perfect recipe to give as holiday gifts – or to keep all to yourself. Graham crackers are covered with a delicious, buttery toffee and sprinkled with pecans for tons of amazing flavor.

The holiday season is always filled with lots of baking and candy making in my kitchen. I love making special treats for friends, neighbors, the postal carrier, and even the guys that pick up the trash – it really makes their day to receive a special homemade treat.
But producing a delicious holiday gift doesn’t have to be difficult or take much time. Enter these easy Graham Cracker Toffee Bars.
I’ll admit that I’m a huge toffee junkie. I love the stuff and will devour it in just about any form I can get it. This toffee is no exception. I love this stuff. LOVE it. And it’s so easy.

When it comes to holiday treats, this Easy Graham Cracker Toffee is a showstopper. It’s sweet, buttery, crunchy, and loaded with pecans for a flavor combo that’s downright irresistible. Whether you’re packaging it up as gifts or sneaking a few pieces for yourself, this recipe will become your go-to holiday favorite.

Why This Recipe Works
Let’s be real—holiday baking can sometimes feel overwhelming. But this recipe? It’s proof that making something spectacular doesn’t have to be hard. Using graham crackers as the base means there’s no dough to roll or chill, and the stovetop toffee comes together in minutes. Plus, you can have the whole thing done in about 30 minutes, leaving you plenty of time to tackle the rest of your to-do list—or just kick back with a cup of coffee.

Perfect for Gifting
One of my favorite parts of the holiday season is sharing homemade treats with the people around me. From my neighbors to the mail carrier, and even the crew that picks up the trash, a little something homemade goes a long way in making someone’s day brighter. This graham cracker toffee is the perfect gift—easy to make, easy to package, and guaranteed to make people smile.

Tips for Success
- Line Your Pan: Trust me, don’t skip the aluminum foil. It makes cleanup a breeze and ensures you can lift the toffee out easily for breaking into pieces.
- Spread It Evenly: When you pour the toffee over the graham crackers, work quickly to spread it out while it’s still hot. A spatula sprayed with nonstick cooking spray can make this step easier.
- Don’t Walk Away: Keep an eye on the toffee while it boils. You want a steady boil for 3 minutes to get that perfect, candy-like texture without burning.
- Cool Completely: Let the toffee cool completely before breaking it into pieces. You’ll get cleaner, crunchier pieces—and you won’t risk burning your fingers.
Customization Ideas
Feel like getting creative? Here are a few ways to make this recipe your own:
- Chocolate Drizzle: Melt some semi-sweet or white chocolate and drizzle it over the cooled toffee for extra decadence.
- Different Nuts: Swap out pecans for almonds, walnuts, or even a mix of your favorites.
- Festive Toppings: Sprinkle crushed candy canes or holiday sprinkles on top while the toffee is still warm for a festive touch.
Ingredients
- 1 (14.4-ounce) box graham crackers
- 1 cup unsalted butter
- 1 cup firmly packed light brown sugar
- 1 cup chopped pecans
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F. Line a jelly roll pan (10"x15"x1") with aluminum foil. Lightly spray the foil with nonstick cooking spray.
- Place a single layer of graham crackers on the pan, covering it from edge to edge. You can break them up however you like. I break mine into halves, then some into quarters to fill the pan. I used about 15 whole crackers to fill my pan.
- In a medium-size pot over medium-high heat, combine the butter, and brown sugar. Heat until bubbles just start to appear, stirring constantly. Boil for 3 minutes. Remove from the heat and stir in the vanilla and pecans. Pour the mixture evenly over the graham crackers. Carefully spread to cover as many crackers as you can.
- Bake for 5 minutes. Remove from the oven and cool completely before breaking into pieces. Store in an airtight container.

Great just as recipe explains
Thanks, Steve!
This was absolutely delicious. Easy to make. Does not disappoint.
Thanks, Shelly! Glad to hear it!
Easy and Delicious
Thanks!
Hi! I only have salted butter on hand. Do you think it would turn out to be too salty if I used this?
No, I think it will work just fine.
If you add nuts to mixture, you won’t be able to spread it over the crackers without a total mess. Crackers will move and it’ll look like a car wreck. Yes, I sprayed a spatula with pam. The toffee is too heavy for the crackers. I threw away half the crackers that didn’t get covered.
I’ve made these a bunch of times, always add nuts, and the toffee is usually pourable enough that there’s hardly any spreading at all. If it was so thick it had to be smeared on, something was off—either it cooked a little too long or cooled too much before pouring; next time, pour it on right away while it’s still hot and flowing, and make sure the crackers are packed in tight so they don’t slide around.
Hey I’ve been making this for years and it’s always a hit. This year, with all the baking and cooking- I’d like to get these done and packed up a little early. How long can these be packed up in advance?
I’m not sure I’d do this much more than a week in advance. Enjoy!
Holy cow!! This is so addicting of you like toffee. This was the first time making this and it will definitely be added to my Christmas baking list. So yummy.
Ha! So glad to hear you loved it, A!
I only have white granulated sugar will this work?
Elle, I’ve only ever made these this way.
Delicious! Have you ever stored them in the fridge? If yes what was the outcome?
I would imagine there is too much humidity in the fridge and these would get soft and gooey.
I made this for my Bible study class and everyone loved it!
So glad to hear y’all enjoyed it, Connie!
Taste is good! But it didn’t get crunchy. Did exactly as recipe calls. It’s cumbly
And soft .This was the pecan toffee
It does sound like the toffee might not have cooked quite long enough. The key is making sure the butter and sugar mixture reaches that bubbly, caramelized stage before pouring it over the graham crackers. Glad the flavor was still on point! Maybe give it another shot—it’s worth it when it turns out crunchy and perfect!
Easy Peasy ..
Two of my favorite words!
M
The butter and sugar never combined. What did I do wrong? Ended up pouring straight butter at the end.
This sometimes happens when the butter melts too fast. Usually, a whisk can help get it all combined.
I love this recipe. My family loves this recipe. It’s so easy to make. I wind up using a whole box of graham crackers whole pound of butter and 2 cups of crushed chopped pecans. I didn’t have vanilla. My granddaughter borrowed it so I didn’t have any, but it makes a great easy dessert. My family loves it and it would make a great holiday gift.
It looks perfect, Linda! So glad y’all have enjoyed it!
This is a great recipe. I made it twice once with pecans and once with walnuts. And it turned out great, but this time it didn’t. It seemed to crystallize what would have been my problem
Sounds like maybe the sugar got too hot. Could be too high of temp or for too long.
Came out great and was easy!😋👍
So glad you enjoyed it!
Oh my…so easy to make and so delicious! Just made my first batch, and it’s not going to last long! Thanks for the recipe, and Merry Christmas!
I’m so glad it turned out great for you!
Try using the Cinnamon Graham’s for a slightly different taste. This is a must have recipe for year round use!
I’ll have to try that!
I have always made “Christmas Crack”. It is the same except using saltines. This is a nice change up. Thanks.
Love it with saltines, too! That sweet and salty gets me every time!
I tried these graham cracker bars one time and could not get them off of the aluminum foil. I really had a mess. I am going to try it again!
Hopefully the second time will be the charm! Good luck!
Try parchment paper.
Looking delicious, pick me.
Thank you for all your time and effort you put into your blah. Love the recipes, your love for cooking and sharing recipes and opportunities to create fantastic meals and gifts. Of course, I’d like to win the giveaway, but if not, I win your recipes. You are like a best friend that shares her life with you through food and experiences.

Made this earlier. Just tasted it. FANTASTIC. Not all recipes turn out well. This one definitively did. It’s a keeper. I will be making it again.
Wonderful! Glad you enjoyed it!
Can I use kraft honey maid Graham crackers……or Keebler Graham crackers?
Either should work just fine!
Not sure I should mess with perfection, but was wondering if you or anyone have tried this using chocolate Graham crackers.
Hmmm… interesting! I’d love to hear if anyone has! 🙂
I just found your website today and can’t wait to make your recipes! I can’t eat nuts, so I’m wondering if you think this graham cracker toffee would be fine if I leave them out. Like you, I also loooooooove toffee! 🙂
Absolutely! It would be delicious without the nuts. Enjoy!
These are absolutely amazing. I can’t even believe it. Everyone’s eyes roll up in their heads when they take the first bite.

Stacey, Is this supposed to be chewy? I thought it would be harder. Did I do something wrong? It’s delicious just it doesn’t break apart – it kind of pulls apart.
This toffee sounds so yummy. Sadly, my husband doesn’t eat toffee and I know if I made it I would eat it all myself.
Looks so yummy
Stacey this recipe is very similar to one I’ve made before except your recipe has graham crackers and pecans. The recipe I made had saltines and chocolate. Anyway, this “Graham Cracker Toffee” looks delicious and I can’t wait to try your recipe!

I love this stuff! The only difference with mine is that after pouring on the toffee I sprinkle with chocolate chips, put it in the oven for a few minutes to melt the chips, then spread them around the top with a flat edge (i.e. spatula or knife). Yummy!!! And you are right, Stacey, this is just the easiest treat to make! Love your site, BTW.
