I knew how much we loved the Orange Juice Cake that I shared a few weeks back, but had no idea y’all were going to love it as much as you do. Mom’s been making that thing for years and I’ve just always enjoyed it so much, but the comments and emails I’ve gotten prove y’all are just as crazy about it!
One of the comments that I got was from Cheryl Griffis. She asked if I had ever swapped the orange juice out for pineapple juice. “GENIUS,” I thought. So I got in the kitchen and set out to do just that.
I made a few tweaks to capitalize on all that delicious pineapple flavor and boy did it turn out amazing!! I think this one might even edge out the orange juice version, but I’ve always been a huge pineapple fan.
The super moist cake is infused with pineapple flavor in the batter and the butter-pineapple glaze that it gets soaked in amps that pineapple flavor up even more!
I took these photos and may have eaten 2 slices… okay, 3. If you’re a fan of the orange juice version and love pineapple, I bet you’re going to devour this. Seriously.
To build on the popularity, I even went ahead and created a lemonade version. My Lemonade Cake is made with lemonade in the batter and then the cake is soaked in a lemonade glaze!

Pineapple Juice Cake
Ingredients
- 1 (15.25-ounce) box yellow or butter cake mix* (I prefer Betty Crocker or Pillsbury – See my note below)
- 3/4 cup vegetable oil
- 3/4 cup pineapple juice
- 4 large eggs
For the glaze:
- 2 cups powdered sugar
- 3/4 cup pineapple juice
- 4 tablespoons unsalted butter
Instructions
- Preheat the oven to 325°F and grease and flour a 10 to 12-cup Bundt pan.
- Use an electric mixer to combine the cake mix, vegetable oil, pineapple juice, and eggs in a large bowl. Beat about 2 minutes. Pour the batter into the prepared pan.
- Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean and the cake is just starting to pull away from the sides. Allow the cake to start to cool in the pan while you make the glaze.
- In a small sauce pan, combine the powdered sugar, pineapple juice, and butter. Cook over medium-low heat until the butter has melted, stirring frequently.
- Use a skewer or toothpick to poke holes in the cake. Pour the warm glaze over the cake while it is still in the cake pan. It’s going to seem like a lot of glaze, but just keep pouring. Allow to cool for 15 to 20 more minutes, or until the cake is cool and most of the glaze has been absorbed, then invert the cake onto a serving platter.

I’m a newbie, so forgive me if I sound stupid…did u say to put the glaze BEFORE inverting the cake? How does the glaze get on TOP of the cake?
It doesn’t. It’s really more of a soak than a glaze, I suppose. The idea is that is soaks into the cake adding flavor and making it super moist.
Very moist the cake can’t last over night but today I am going to put pineapple crushed in the mix but keep everything the same this is a asome cake thank you for sharing

Don’t know why people are complaining about Duncan Hines cake mix. I just made this using a yellow Duncan Hines perfectly moist yellow cake mix. What I had on hand. Followed the directions given. It is a good size. It did not sink. It soaked up all the glaze. Don’t see how you can double this and it not run over in a bunt pan. Just make sure it is done! Those using this cake mix must be getting in to big of a hurry to take it out of the pan. I left in pan an hour or longer. Went out for dinner and when I got home it turned it over. No spill. Hubby says it’s great! If I knew how to post a picture I would.
I’m so glad to hear you had success with it! I’ve tested it myself and have had it fall sometimes and come out perfectly others, but it only seems to happen with Duncan Hines. And that stinks because Duncan Hines is typically my favorite cake mix. Do you remember if you used the yellow or butter flavor?
Duncan hines has some good things sometimes but betty crocker is far better. Depends on what you are making

Well, you got a cake recipe, it just so happens to start with a cake mix – which is nothing more than pre-measured ingredients. Cake mixes are more affordable, produce more consistent results, and make baking a whole lot easier for the average home cook. My goal here is to make cooking easy and approachable. I want to get folks back to the table to reconnect as a family and if a boxed mix helps people do that, so be it. Sorry to hear you were disappointed.
Go on line and look up Paula Deans scratch cakes. They are very adaptable to any recipe if you are looking for scratch cakes that are wonderful. Some recipes are just easier for cake mixes. A lot of moms like fast because they work and are busy most days. If you want scratch, paula deans scratch are the best around
I agree Lana. The recipe sounds interesting but when ingredients require a box of mix I am so disappointed. Even though I have a well stocked kitchen I can’t go out to buy a prepared mix to make the recipe. Sad, that’s all. Have to then find a recipe for cake to substitute and of course that doesn’t always work.

You can easily make a Tello cake from scratch and add substitute the liquid for the pineapple juice. Anyone that knows how to cook can figure that out.
Wondering if I could add coconut or coconut pudding to the cake. I love pineapple -coconut . I’ll be making this cake this weekend and can’t wait to try it!

You can always add nuts, coconut or dry ingredients to any cake but to keep moist when adding dry ingredients add the flavored pudding and a half cup of sour cream. It off sets the dry ingredients. Use a full cup of sour cream if you want to keep cake very moist and are adding two dry ingredients. On Paula Deans carrot cake recipe that was her grandmothers i use a small box of vanilla instant pudding only a half cup of oil instead of one cup, a cup of sour cream and one jar if jr size, two if tiny size of baby carrots or half cup of fresh carrots cooked down and pureed. It makes the best carrot cake i have ever had. I change her frosting to butter cream and it balances the cake perfectly. I like gourmet rich flavors and Paulas frosting for this cake is too sweet for my tastes. I reduce her 1 cup of oil to half, i found that her 1 cup is just too oily and i want the sour cream, pudding and baby carrots off set that other half cup of oil with full flavor. If the “Master Bakers & “Pastry Chefs” who do not appreciate the easy option of using a cake mix (which I’m not ashamed to say I do!), would just pass by these recipes instead of criticizing, that would be nice. I noticed that the Orange Juice cake recipe called for lemon pudding mix but the Pineapple Juice cake has no pudding mix in the ingredients. Is there a reason? Thank you. I’m on the fence about which one to try.
You can add it, but I found in testing that it didn’t make a bug enough difference to warrant an additional ingredient.

I made this for my family and we all loved it!! I decided to make one to take to work and share with co-workers and it was a huge hit. It’s so easy to make, it’s refreshing, especially for people who don’t like the texture of pineapple, but love the flavor! To me, it tastes just like a pineapple upside down cake, minus the pineapple slices. I made it just as the Recipe is written. I will definetly make this a lot!!

The vanilla flavor should work fine, but many readers have reported issues using the Duncan Hines brand in this recipe.

Hi, Stacey–I made this cake this morning and brought it to a potluck at church at noon. Everyone loved it and asked for the recipe! I have a “fancy” Bundt cake pan and it looked so nice, very shiny from the glaze. My husband is not a fan of pineapple but he had a second slice! Definitely a recipe I will make again. Thank you!

This is one of my favorites! My family loves anything with pineapple. I don’t know how it’s going to turn out but I’m either going to add ½ of a small can of crushed pineapple to the cake mix or the liquid you pour over, to my next one. It may cause it to fall apart but all that means is I’ll eat it out of a bowl.❤️

I like using Pillsbury Gluten Free Cake Mixes for family that require them. Seems to have a nicer texture.

I’ve made this 3 times using Duncan Hines and it came out great!! My only issue is that it’s a little smaller in height than I am used to. I was wondering if I double the recipe and increase the cooking time, would it still come out ok? I want to make it for Christmas but I don’t want to ruin it.

If keeping it longer that 24 hours, I’d recommend refrigerating it.
Is it better to make this a day in advance or the day it’s being served?
I think it’s delicious either way, but might prefer it the next day.

I have thoroughly enjoyed fixing recipes in your Southern Bites cookbook (hash brown casserole, tomato gravy … loved the tomato gravy with country style steak … & sloppy joes) and rely on your You Tube videos for cooking info i.e. different types of salt to use and when to use them how to make a rue, etc.

Can I double the ingredients times 2, I made the cake for my birthday in August of this year and it was Fabulous, however it was just little, maybe it was the size of the Bundt pan I had, I don’t know, but I want to make this cake again for thanksgiving and I wanted to know if I could double all the ingredients times 2, to get a bigger fuller cke, I would also double the box cake mix… can you please tell what you think???????????
I’ve not done that, Cynthia, so I can’t say for sure. You’d just need to make sure you have a very large Bundt pan and the cook time would need to increase some as well.

Hi Stacey, I want to make the cake for a birthday dinner in memory of my mother. I just wanted to double check the oven temperature and the amount of time you let the cake soak in the pan before you turn it out. I plan on making the cake the day before the dinner
This is a wonderful recipe and I hope you and your family enjoy it! Bake at 325 degrees for 30-35 minutes until the cake starts to pull away at the edges and a toothpick inserted comes out dry. After you remove from the oven, then began making your glaze. Pour finished glaze on cake while it is still in the pan and let the glaze soak in until the cake is completely cooled. After letting it cool completely, then invert the cake onto a plate.

Loved this cake! So moist and just the right amount of sweet. I am going to try this with pink lemonade.
So all I had was Duncan Hines that is what I normally Buy. My cake was beautiful then when I get to the glaze LOL I did exactly as the recipe said poured it on my cake and let it sit until the cake was cool and transferred it to a plate. Oh my gosh it was so thin I had juice everywhere and yes I did pierce the cake before with a toothpick so hopefully it will taste great but I made a total mess with the glaze. I do not feel like the cake mix could have made that big of a difference am I wrong. Why was my glaze like pouring out pineapple juice. You did mean two cups confectioners powdered sugar correct? The only thing I know to do is next time try it with a Pillsbury cake mix and see if it makes a difference anyway haven’t tried it yet but can’t wait to do so messy or not
After some reports from readers and lots of testing, I’ve found that Duncan Hines cake mixes often do not work with this recipe. I prefer to use Betty Crocker or Pillsbury. If the glaze ran out everywhere then you may not have let it set in pan to “soak” long enough. This cake tastes so good and I hope you try it again!

This was amazing! I did add a splash or two more of the pineapple juice to the cake mix to ensure it took on the pineapple flavor. (I used the juice from the pineapple spears from SC with added coconut water) I also didn’t use all the glaze, still came out very most! Will make this my go to recipe.

Diy cake mix 2. 5 cups ap flour, 1.5 cups granular sugar, 1 TBSP baking powder, 1/2 tsp salt. Worked perfectly. Made 6 – 6 inch bundts but baked at 350 for 35 minutes

I used a Pillsbury Gluten yellow free cake. I did sift the cake mix prior to making the recipe due to some Gluten Free mixes seem to be very dense when baked and added an extra egg to the mix. I’m going to try the recipe with orange juice glaze and also lemon. I have some Amish friends that I also passed this recipe on to also. Thank you again for sharing.

Made this cake for the first time today. It is delish!!! So moist and flavorful! I made a 13×9 cake since I didn’t have a bundt pan. I used Betty Crocker cake mix, but the center of the cake sunk in or maybe didn’t rise properly. I literally went over, and over, and over the Ingredients and Recipe several times Before and During prepping (I’m a bit OCD) and everything has to be perfect. Not sure what went wrong, but it didn’t effect the taste that’s for sure!

I’ve made this cake with all 3 cake mixes and in my world it just doesn’t make any difference. I think it is the best cake I’ve ever made or eaten. My husband and I love it. I’m no great baker but this cake is so easy to make. I’m so glad you shared it and that I found it. Great blessings to you.

How long does this cake stay fresh? I haven’t made it but want to for a reunion. My day before the reunion is super busy. Can I make it a couple of days ahead and keep in the fridge?
It’s best within a few days. Refrigerating it will help prolong it.
I’ve made this and your orange juice cake so many times for my friends and family. They love them a freakish amount and I can’t blame them.
The 2nd time I made the pineapple juice cake, I tried a coconut cream pudding mix in the cake batter. For the glaze, I did 1/2 cup pineapple juice and 1/4 cup of Malibu rum. We had a Malibu and pineapple juice based party punch so it matched the theme. It worked really well.

I made it and it came out amazing, just like the picture posted. Everyone loved it, the only change I made is that I reduced the pineapple juice by 1/4 and replaced it with vodka. It was definitely a hit????

I’ve made this recipe several times and it’s always my go to cake to send to a luncheon because everyone loves it. I just now made one with pineapple cake mix. I chopped some maraschino cherries and added them to the cake and for the glaze I used the cherry juice instead of pineapple. DELICIOUS ???? ❤️

This cake has become a regular in my dessert rotation. I’ve found that those little individual cans of Dole pineapple juice are just the right size for this cake. I made this for a young family from church that I had over for dinner. I know that David’s favorite part of dinner is dessert so I made sure to have something sweet for him.
They have a 3 year old daughter who tore into her piece of cake and wanted more! It was a real hit with the whole family and they want it again next time. I’m going to do the orange juice one, and I have an orange glaze my momma used to do which I’m going to attempt. Kudos to the chef!

just curious , what is the difference between the duncan hines brand cake as opposed to betty crocker or pilsbury in this recipe?
I’m honestly not 100% sure. I’ve done some extensive testing, and I think it has something to do with the fat content in the mix, but can’t say for sure.
Made it exactly to the recipe, stored it still in the Bundt tin in the fridge overnight and it turned out beautifully. So yummy!

The Pineapple Juice Cake with a few changes….my Hubby said “it’s not just good, it’s excellent”!!!
It is a winner winner.
For best results the recipe calls for using only the 15 oz. Better Crocker yellow cake mix……well all I had was a 9oz. “Jiffy” Golden Yellow cake mix in the house.
So I divided the rest of the ingredients in half. 1/3 c pineapple juice, 1/3 c crisco vegetable oil and 2 eggs. Added in flaked coconut and bits of candied pineapple.
Mixed by hand with a whisk.
Put crisco lard on bottom of pan, laid a round parchment paper on top of that and sprayed Bakers Joy Powder Non-stick spray over parchment and up the sides.
Poured batter in pan.
Baked at 325° for 29 minutes in an 8″ round pan (until toothpick came out clean).
Took it out of the oven and poked holes all over cake.
While it was in the oven I mixed: 1 c powdered sugar, 1/3 c pineapple juice and 2T butter together in a glass measuring cup and heated on High in the microwave for 2 minutes….whisked together
Poured hot glaze all over the hot cake and let soak into the cake.

This recipe is a waste of time and Money. I bake a lot and shared the cake with a friend. All l I could taste was oil. Will never make again. Her comment was “recipe should be tosses Out??
You can see there are quite a few reviews and no one has mentioned that. Are you sure your oil wasn’t rancid and that you used the correct amount?

I made this last night and followed the recipe exactly and it is AMAZING!! Super moist without being soggy like Tres Leche cake can be. I brought it to work and EVERYONE is raving about it. Stacy, I made the pineapple juice cake and it was soooo good. My hubby said it was a ‘keeper” !!! In March, I was buying up food and bought a box of Best Choice yellow cake mix. It turned out perfect. I am a Duncan Hines Butter recipe girl. I usually buy Betty Crocker or Pillsbury in the yellow cake mix but since the Best Choice was good, guess I will buy that again to use for this recipe.

Another reader said she made it in a sheet pan. It might affect the bake time slightly, but everything else should work about the same.
Can I use Pam to spray the pan and then flour it. Or do I have to use Crisco shortening and flour
If you have a super reliable pan that usually doesn’t stick, sure. It really just depends on the pan.
OMG…..made your pineapple juice cake in a fancy bundt pan and took it to lunch with the ladies……it added so much class to the fast food joint we were meeting at….They all marveled how wonderful it was. Sure! The flavor will be a bit different, but it will still work.
I can’t eat sugar but I bake a lot for family and friends. I baked this cake Saturday and decorated it with pineapple chunks and cherries on toothpicks and put them around the cake for a little get together that evening on our patio. It was a hit for sure!!! Oh. My. This is amazing!! I just finished inverting it to a plate, and I am so impressed! The thing is, I didn’t use a cake mix. There is a smell to cake mixes that I just can’t abide, the smell makes me nauseous. But your cake looked so wonderful I had to give it a go. I googled Copy Cat Yellow Cake Mix. There’s a lot of contenders out there, but this is the one that I felt covered my needs the best: https://iambaker.net/homemade-yellow-cake-mix/ I used just the dry portion.
2 1/4 c flour, 1 1/2 c sugar, 3 1/2 tsp baking powder and 1 tsp salt. As I was mixing up the copy-cat mix, I couldn’t help but wonder if this was going to work. Would I be throwing out perfectly good food? But I soldiered on.
When I looked at your recipe, it called for a 15 1/2oz box of mix. Because I weigh my ingredients, I knew that I had about 23oz of mix.
What to do.
With some trepidation, I weighed out 15 1/2 oz of my mix and carried on.
What can I say? It was perfect. It’s beautiful. I did a little taste test and it’s wonderful.
PS With the leftover mix, I decided that I will make more and have a master mix. I will be able to measure out 15 1/2 oz of yellow cake mix any time I need it. Just me being fugal.

I usually never leave comments on recipes, but I just had to say that I think this is one of the BEST and Moistest cakes I have ever made! Make sure you reward yourself with a piece while it is still a little warm, melts in your mouth!! Two pieces left and I am ready to bake another one..

If you’re going to eat it within a day or so, it should be fine. Otherwise, I’d stick it in the fridge.

After successfully making this for my family, which they loved, I decided to play around with the recipe. So I substituted a little Malibu rum for some of the pineapple juice in the cake.
For the glaze I added a couple of tablespoons of coconut cream and I also used granulated sugar instead of powdered in the glaze which gives it a little crunchy texture along the edges.

My attempt at adding coffee to a chocolate cake was ok. Not a whole lot of coffee flavor, but still tastes good. Might try it with a yellow cake mix and possibly add some additional coffee extract.

I actually made it the first time with Betty Crocker mix. It wasn’t done so I had to cook another 15 minutes. I used the full glaze amount. It was delicious but VERY moist. The Second time I made it, I did it with Duncan Hines. It worked great! I only used half of the glaze recipe and it was beautiful, delicious and perfect in every way!

Made this cake today for Mother’s Day Dinner-on-the-grounds at Church. It was truly a big success. Our Pastors daughter asked if they could take some home with them. LOL!!! I made a topping with 1 can crushed pineapple in juice, 2 cups powdered sugar and 4 tbsp unsalted butter. Boiled for about 5 minutes after butter melted. Used this as topping on each slice of cake. DELISH!!!
My Mother-n-Luv used to make a pineapple cake for holidays and THIS is the closest I’ve ever come to duplicating it. She also cooked a topping for each layer and the top.

I actually had the same question and reason! I made it tonight and it came out just fine! It really is very yummy so go for it. Yellow probably “better” but no one will be disappointed with the white mix used! Also I used Duncan Hines and didn’t have any trouble, it did split a little when flipped but that might have been my fault.
I think it’s the Duncan Hines butter mix that fails. Regardless, I’m glad you enjoyed it!

I don’t, but there are some out there. The problem is in the amount. It would need to be a homemade recipe that makes the same amount as the box mix.
What was it about Duncan Hines that didn’t work if you don’t mind me asking?

The cake doesn’t rise.
I made this cake for a church gathering this evening. I added about 3/4 can (20 oz. drained crushed pineapple) and cut the butter back to 2 tbsp in the glaze. I thought it was really good, but my husband thought it needed more pineapple. Guess I’ll use the whole can after I drain it next time.

This was one fantastic cake “Pineapple Juice Cake”, it was a little too sweet for me…BUT…my Husband thought it was great.
He said (as he came back into the kitchen to get another big slice) “I could eat this whole cake, next time you make it put some pineapple rings on the bottom because it would make a good pineapple up-side down cake too”.
I’d made it in a 9×13 inch cake pan instead of a bundt pan, and didn’t put the whole 3/4 c of juice in the glaze. It certainly made enough glaze.
Will do that again.

Simply Delicious sells an orange juice with pineapple in it. It is in the dairy section of the grocery store. Maybe using that juice would be the best of the two worlds (orange juice and pineapple).

I made this tonight and it was delicious!! Guess what… used a Duncan Hines mix too. It was all I had (French Vanilla). I did grind up some pineapple chunks and put them in the cake, and added a little vanilla. It cooked perfectly though. Probably took about 40 minutes. I will make this again! Idk why the Duncan Hines worked for me, but it sure did!! Maybe weather could be a factor for some? Thanks for the new fav recipe!

I made this tonight but substituted guava syrup for the pineapple juice. Cake is delicious!! I halved the glaze recipe but still found it very sweet, maybe because the syrup already has sugar. Maybe next time, I’ll just add syrup to the butter and omit the powdered sugar?
Actually, update. The only part that was really sweet was where I had cut a slice of the unglazed cake to taste and the glaze pooled in that open space (I used a 9 inch round cake pan). Went back to it and simply cut away from that part and it is so moist, delicious and perfect. I had planned to share but it’s not looking that there will be enough! My mom and I are having a slice each for breakfast lol. Will DEFINITELY make this again and will continue to half the glaze recipe. It’s the perfect amount for me. Thank you!

Just made this for the first time. I used a bundt pan with a white coating on the inside. I’m not sure if it is a nonstick or not. Well, I sprayed and floured as the directions say and it stuck. The cake is super moist and tastes great but not the prettiest since it was hard to get out of the pan. Suggestions?

I’m not a huge fan of that particular type of pan for this very reason. I nearly always have cakes stick in those.

I am a Duncan Hines gal and did not realize your “note” until now.
I used Duncan Hines butter and also canola oil (didn’t have enough vegetable) and my cake came out awful. I was wondering if the temp had anything to do with it. It seemed like it wasn’t rising so I turned it up to 350. I had to throw it away.
I have made the lemon cake and my family loves it. I will retry and use pineapple jello.
I’ve always been Duncan Hines fan, it’s just that the butter cake mix doesn’t work in this recipe, unfortunately. And I wish I could understand why.
This cake was amazing. I even added crushed pineapple (completely drained) to the cake batter for more texture and pineapple flavor. Turned out great!
The cake is good, very moist. Thinking it was a bit “eggy” thinking will cut back to 3 eggs next time so not so dense in the middle. Thx for sharing.

Hello! Thank you for the recipe! The only change I made to this recipe was half the glaze and it was perfect for my taste! I took it to a potluck and I kid you not it was gone within 5 minutes and the 10 other dessert options next to it were ignored. People loved it so much! I can’t wait to try the orange one I read about. My mom has been trying to make a moist orange cake for soooo Long and thanks to you she will be able to finally make it! Also I want to mention I used yellow cake mix from Pillsbury as recommended (I learned the hard way once to read the whole recipe before buying ingredients and cooking). I had no problems with this recipe. The cake was perfectly moist, not too sweet and had a great pineapple flavor. Maybe I’ll try adding in pineapple chunks next time. So I baked this the other day and I must say the weirdest thing happened to me. The cake turned out perfectly (thank you for the warning about the glaze. I definitely would have thought I screwed up if you hadn’t mentioned it). Now everybody in my family loved the cake. But here’s the weird thing, I didn’t like the pineapple flavor, yet I COULD NOT STOP EATING the cake!!! The texture is SOOO GOOD! I have to make a vanilla/butter version. ???????? I’m guessing I can just sub milk for the juice in the cake but what would you suggest I sub for the juice in the glaze? Any suggestions? Thanks again for such a good recipe. I just wanted to say I made this pineapple bundt cake. I found that there was an excess of the pineapple glaze that wasn’t absorbed by the cake. It accumulated in the center hole area of the bundt cake. Not knowing, I used it all as this was my first time making. I personally found it to be too sweet for me, and chose to give it away. I followed the recipe to a T’. I’m going to give it another try, but I plan on cutting the glaze mount in half. I love pineapple and it’s flavor, so I’m hoping less will be more palatable for me. I say “kind” because I get so many folks who lash out when things don’t turn out perfectly, not realizing that with each recipe there are so many moving parts. I love this recipe! Thanks for sharing it, it’s my new favorite quick cake that I can always have stuff on hand for. Plow my driveway- pineapple cake! Dessert auction-pineapple cake! The first time i made it, I didn’t have pineapple juice so i puréed a can of pineapple chunks and put it through a sieve and ended up with exactly the amount of juice needed for the recipe. It made a very flavorful juice. I reserved 1/4 cup of the glaze and added powdered sugar to consistency for an icing to drizzle or pipe on when cooled, looks elegant. Thanks again!
