Â The truth is, we are ALL so consumed with screens these days – be they screens on televisions, tablets, smart phones, etc. Â I grew up having dinner with my family nearly every night. Â It was a time for us to chat about our days and connect as a family. Â Today’s screen distractions prevent folks from reconnecting and keep us each engrossed in our own little worlds. Â I challenge you to set aside one night every week to sit down as a family for a home-cooked meal without any distractions. Â Turn off the electronics and just be a family. Lasagna Casserole
Ingredients
- 4 cups wide egg noodles
- 1 1/2 pounds ground beef
- 1/2 medium onion, chopped
- 1 (8-ounce) package cream cheese
- 1 (5-ounce) can evaporated milk
- 2 cloves garlic, minced
- 1 (24-ounce) jar pasta sauce
- salt
- 2 cups shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F. Cook the noodles according to the package directions.
- Brown the ground beef with the onion and drain well.
- Drain the noodles and return them to the pot. Stir in the evaporated milk and the cream cheese. Stir until the cream cheese has melted. Pour the noodles into a 9x13-inch baking dish that has been sprayed with nonstick cooking spray.
- Return the ground beef to the pan over low heat. Add the garlic and cook until fragrant (2 to 3 minutes). Add the pasta sauce and add salt to taste. Pour the meat sauce over the noodles and top with the shredded cheese. Bake for about 20 minutes or until the cheese is melted.

My breakfast for dinner fave is a farmer’s omelet. For quick and easy I also make “jag” a Cape Verdian Portuguese rice and beans. My husband is Portuguese and taught me.

Chicken foil packets are quick and easy. Season chicken, chop up vegetables and combine them all with some olive oil. Cook brown rice with half chicken stock and water let the rice cook while the packets are in the oven. They are done in 20 minutes.

IOur favorite quick and easy dinner idea actually fits with the breakfast for dinner theme. Because we have a giant bag of pancake mix, I regularly make pancakes for dinner. It is quick to prepare and the kids love them.

It’s often too hot to run the oven where we live, so we do a skillet lasagne on the stove. I found some tiny lasagne noodles and I cook them and add cooked ground meat, onions, sauce, spinach, feta cheese, and a mixture of cheddar and mozzarella cheese. The whole family loves it.

One of my favorite quick suppers is fried boiled potatoes with some eggs scambled in. Can add onions, peppers, bacon or bits of ham. I often have a dish of boiled potatoes in the fridge to use in this way or to fry for a side dish.

Your Lasagna Casserole looks/sounds delicious. “Lazy Lasagna” is a favorite for my extended family. We usually make it with wagon-wheel pasta because the guys all prefer that for some reason. Because I live alone, it would be kinda silly for me to take the pledge, but I will say that when dining with others, I will confiscate any device that appears at the table, regardless of where I am. If it’s a “new” person in the group, I’ll give them a warning, but if it comes out again, it gets confiscated until after dinner. Surprisingly, nobody has given me a hard time about this lol. As far as quick dinners go, one that we always keep in mind is Pesto Chicken, because everyone in our family has some pesto in the freezer and usual has chicken – just slather the chicken in pesto and throw it in the oven to bake. When it’s about ready to come out, melt some cheese over the top. Can’t get much easier than that, and no time at all spent prepping. 🙂

Need: One 8 ounce can Pillsbury Country Biscuits, 3 Tbsp. melted butter, 1/2 cup sugar, 1 Tbsp. cinnamon.
Mix sugar & cinnamon. Dip biscuits in melted butter & then into sugar mixture. Place on baking sheet. Bake at 375 degrees for 10 to 12 minutes. Let donuts cool. Using pastry bag fill donuts with your preferred choice of Smuckers Jam. Enjoy!

When we were growing up and on the rare occasion Mom was unable to prepare supper, my Dad would cook. He ALWAYS made breakfast for supper. He would slice potatoes and fry them in a little oil, scramble eggs, fry bacon and make toast. It was always one of mine and my brother’s favorite meals. I realize today all that frying would not be good for you but back then (in the 60’s) we didn’t know any better. Frankly, I would eat it again today if Dad were to prepare it! He will be 85 at the end of the month!
Probably not so bad….rendered bacon fat, esp it the bacon does no have nitrates, You can fry the potatoes and onions in good oil…use a little bacon fat or butter for the scrambled eggs..and eat a piece or 2 of bacon…it is no worse than pizza w/ pepperoni a processed meat,also…I heard but have not checked it out…that rendered pork fat…has its own oleaic acid…and therefore is not bad for you in moderation…my mom always had a grease pot…to fry fish, potaoes, german potatoe salad etc….Love, peace and BACON GREASE!

Breakfast for dinner is one of my family’s favorite meals! I often make fried egg, bacon, and cheese sandwiches when I need something fast and portable. Not the healthiest meal, but still better than fast food! I also make omelets for a fast dinner. They are cheap and easy!
Breakfast for dinner is always great especially in the colder months. We enjoy eggs, bacon, grits and toast, substitute the grits for hash browns or sometimes it is just pancakes. Anyway you cook it breakfast is a great dinner meal.

Crock pot taco chicken
I put chicken breasts in the crockpot and pour a jar of salsa over them. I let them cook while I’m at work then shred them using two forks when I get home. Flour tortillas, and sour cream and you have a great chicken soft tacos! Oh and I took the pledge although truthfully, we NEVER eat in front of the tv 🙂

My favorite quick dinner is usually pasta. I like to make “instant meatballs” with turkey Italian sausage. I squeeze the sausage out of the casings, forming 3 or 4 round-ish balls from each link, then brown them in a skillet in olive oil. Add a jar of pasta sauce and bring to a simmer. Cook for 30 minutes or so, or until the sausage is cooked. Serve the “meatballs” and sauce with pasta and make a quick salad. Easy, quick, and yummy.
We have brinner sometimes twice a week…chocolate chip pancakes are a favorite, as is French toast. We do not always have bacon or sausage, but will use some good jam with the French toast instead of syrup. If I’m feeling REALLY sinful, I’ll stuff the French toast with cream cheese. YUMMMM!!! We have always eaten supper together, and now, even though the children are gone, with families of their own, they have continued that tradition. Make a mama proud that that lesson stuck so well! 🙂

I took the pledge. My children are 20, 18, and 16 and we’ve always turned off the television during dinner time, and there’s no cell phones at the table. We never answer the house phone either…if it’s important they’ll leave a message.
I love throwing together a crustless quiche. A few eggs, some milk, onion, salt & pepper, parmesan, feta, and some veggies like asparagus or broccoli. Bake for 45 minutes at 350. While it’s baking I throw together a salad and slice a nice crusty loaf of bread. Dinner prepped in less that 15 minutes and then I just sit back and wait.
I believe if we had more disconnects this world would be a lot better place to exist. It is one of my favorite things to do since we stay so busy. Just my son and I at home in the evenings so a lot of the time we are at my parents and enjoy the evening with most all of my family there having supper…that would be my parents, myself and my son Jacob, my two sisters and their kiddos, my brother-n-law, and my brother…those times together are priceless! I doubt very few ppl can say they get to sit down with that many in their family almost every night! I thank God each day for that blessing! Thank you for this challenge Stacey!

my favorite Brinner is to take the Hungry Jack Mix and make a 12 pancakes about saucer size. I put four in the bottom of a greased (sprayed with Crisco spray) 8 or 9 inch square pan. Over this I put a thin layer of scrambled eggs, then I pour a little sausage gravy over the eggs, sprinkle with shredded cheese of your choice, add another layer of pancakes and push down gently to make the layers stick together, add another layer of scrambled eggs, top with crumbled bacon, then shredded cheese, add your next layer of pancakes and press down gently again., top the last layer with shredded cheese and drizzle with Hungry Jack syrup. Bake at 350 degrees until hot and bubbly and the cheese is just golden brown. Remove from the oven and let set for ten minutes then slice and serve this wonderful brinner.. SO YUMMY!

We took the pledge! We already had it in place at our house — no phones in the dining room EVER. TV is in the family room and nobody is allowed to take food in there either, unless it’s a special show (like a football game!) that someone wants (NEEDS) to see.

Now that’s really easy Stacey, as we had brinner for dinner last night! First I took out the griddle and took some bulk pork sausage and fried up some patties. I then made French Toast using thick sliced bread, and using Hazelnut Dairy Creamer instead of the milk I would normally use. After they were all nice and browned, I took some blueberries, added some sweetener and nooked them for about 45 seconds, then poured the berries over the french toast before adding syrup. Yummy
I like to make a salad from the pre-washed and packaged mixed salad greens. Throw a couple of chicken tenders into a non-stick skillet with a little Greek seasoning and cut into bite sized pieces when they are done. Mix with the greens, some onion, grape tomatoes, kalmata olives, a little reduced fat feta or bleu cheese and top with a homemade vinaigrette. This is a meal that’s quick, healthy and delicious.
One of my quick and easy go-to dinners is shrimp and pasta alfredo. I make the sauce with fat free half and half, low fat cream cheese, and some pecorino romano cheese. The frozen shrimp goes into the pot with the pasta when it’s almost done cooking. Drain the pasta and shrimp, put it back in the pot, pour the sauce over and voila!
My kinda dish….would love your recipe for the white pasta sauce…like that it is low fat and still tasty! Regular alfredo has just to much fat for me…

My favorite meal idea if fajitas. I always keep a few bags of frozen peppers and onions in the freezer, so the prep work is already done. I also make my own fajita seasoning, so it’s rare I don’t have all of the ingredients on hand. So quick and easy, and my 4 year old LOVES them.

One of our favorite quick meals is taco soup or taco salad!
I took the pledge! And a fave in our house? Cook a package of bacon and crumble… boil package of eggs noodles…Chop up a medium head of cabbage and cook it til wilted in the bacon grease and butter and mix all ingredients… yummylicious and so quick and easy! Hubby doesn’t know how I do it…

I love making a pancake sandwich for dinner: 2 chocolate chip pancakes with peanutbutter in between the two. You can never have too much peanutbutter and chocolate! That’s my idea of a good Brinner.
My favorite quick and easy dinner idea is tomato soup and grilled cheese and it just happens to be a favorite around here!!
One of our favorites is biscuits and sausage gravy, along with new potatoes fried with onions.
