Hobo Dinners

From the time I was a kid in Cub Scouts, these fun and different packet meals have been a hit at our house.  Back then, we would fix them up and drop them into the hot coals on the edge of a camp fire to cook.  Today, to make things easier, we just plop them in the oven.  They will never be as good as those campfire ones, but they are still a favorite of mine.  They are easy and very versatile and you can just about add any veggies you want.  You can also swap out the ground beef for ground turkey or even a skinless chicken breast half.

Ingredients

  • 2 pounds ground beef (I used ground chuck.)
  • 2 teaspoons seasoned salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • baby carrots
  • sliced onion
  • potatoes (cut into 1 inch cubes)
  • sliced mushrooms
  • sliced celery

Instructions

  1. Combine ground beef, salt, garlic powder, and black pepper (and any other spices and seasoning you might like – I sometimes use a bit of Mrs. Dash also.)  Mix well and form meat into 4 to 5 hamburger patties.
  2. Place each patty in the middle of a large piece of aluminum foil and top with your favorite veggies and a little more salt and pepper.  Seal aluminum foil into a packet.
  3. Bake at 350 degrees F for 50 to 60 minutes.

  1. I make this as a one dish meal on top of the stove. I divide one pound of lean ground beef into meatball sized chunks, then cut up carrots, celery, onion and potatoes into big chunks (I parcook all the cut up vegetables except the potatoes for 2 minutes in the microwave.) I start a large skillet on high and put in the ground beef first, then after about a minute, I add everything else, and salt and pepper, garlic powder, then cover and cook on low heat for 30 minutes. I sometimes add 1/4 chicken broth or water before covering. Don’t have to heat up the oven, and still has that nostalgic taste we all remember. (Of course, little kids like the foil package method , especially if they get to help!)

  2. I love doing these with a good chuck steak, sliced onions and mushrooms and slice a potato, shake a little lawry’s seasoning salt on them and a dash or two of worcestershire and a pat of butter.

  3. Oh my! Don’t know what happened to my previous post but it is a mess! What I said was that my kids used to love these. Mine were just a bit different though. Instead of the celery I used drained whole kernal corn and when they were all put together I would put 2 heaping TBS. of Cream of Mushroom soup on top and then seal them tightly. They were oh so good!

    As always Thank You for the recipe! I love cooking in Foil. I discovered cooking in foil about 12 years ago. I seem to do it mainly in the Spring & Summer. don’t know why… I just do.

  6. My kids love love love these! Have you ever tried omelets in a bag? You scramble 2 eggs add a bit of cream or milk then cheese and whatever else you want meat and/or veggies then pour the concoction into a baggie and zip seal it.
    You drop them into a big ol pot of boiling water and cook for 2-3min stirring enough that the bags don’t touch the sides. It’s so much fun!
    Then cut the baggie open and voila! A yummy moist cheesy omelet. We did it at girlscout camp and now I do it with my 3 boys um cuz they don’t let boys go to girlscout camp. DUH! Enjoy

  7. My mom told me about these they are good every thing in one package ,you can add vegetables in meat like onions and spices. My son Michael loves these as well as my husband. thanks for putting on to view. Lila
