Folks, I’ve always said that cooking delicious food doesn’t have to be complicated or difficult.  Some of my most favorite recipes are the ones that are super simple and only call for a few ingredients.  The disadvantage to that is by using only a few ingredients, you might miss out on opportunities to add flavor.  When that’s the case, you want to pick the most flavorful ingredients to make the dish even better.

Good, Really Goodâ„¢ Chicken Broth in this recipe.  Now, I never share a product with y’all that I don’t love, but this one is special.  From the moment I cracked open the jar, I knew it was different.

Ingredients for Broccoli and Cheese SoupY’all, this stuff is amazing.  While other broths just kinda smell like, well… broth, this chicken broth smells like savory roasted chicken.  It is so rich and flavorful that it’s perfect for just warming and sipping straight from the jar.  It’s cooked in kettles in small batches so it tastes so much like homemade.  It’s also low in calories, paleo-friendly, and completely free of hormones, gluten, GMO’s, fat, trans fat and saturated fat.

Zoup! got its start as a fast-casual franchise of restaurants and now they’re bringing restaurant-quality broth to supermarkets.  Now, you might find the broth to be a little more expensive than the cardboard box varieties at your local store, but the difference in flavor is worth the extra – especially when you rely on the broth for the base flavor as in this recipe.

Super Simple Broccoli Cheese Soup

Ingredients

  • ½ cup unsalted butter
  • 1 yellow onion, finely diced
  • â…“ cup all-purpose flour
  • 1 (32-ounce) jar (4 cups) Zoup! Good, Really Goodâ„¢! Chicken Broth
  • 2 cups half and half
  • 1 ½ teaspoons salt
  • ½ teaspoon garlic powder
  • 1 (20 to 22-ounce) package frozen broccoli florets, thawed
  • 2 cups shredded sharp cheddar cheese

Instructions

  • In a heavy bottomed stock pot or dutch oven, melt the butter then cook the onions over medium low heat until tender - 8 to 10 minutes.  Sprinkle the flour over and stir well.  Cook for about 3 minutes.  
  • Gradually add the broth and stir to combine after each addition.  Add the half and half, salt, and garlic powder and stir well.  Bring to a gentle boil, stirring very frequently, being cautious not to scorch.  
  • Add the thawed broccoli and stir well.  Cook over medium low until the broccoli is tender.  If you prefer a smoother soup, feel free to use an immersion blender to puree some of the soup to a smoother consistency.
  • Add the cheese and stir until it has melted.  Add additional salt and pepper to taste.

    This is a great recipe…always have frozen broccoli so easy to make…I have used..instead of half and half…2% condensed milk, I have used room temp cream cheese, stir in at the end and other cheeses as well..I have used broth with a bit of better than broth to up the broth flavor, I have also used chicken bone broth..even with all these substitutions it still is very good..sometimes I add chopped celery or even a potato…easy and always tastes good!!

    This recipe is pretty good. The broth kinda tastes like Wisconsin cauliflower soup so I really like it. Next time I will cut up the broccoli so it is easier to eat.

    This recipe is quick and easy especially when family calls and says “hey, we are in the area and thought we’d stop by” at 5:30pm on a Saturday. I doubled the recipe and whipped this together and had it cooking by the time they got there. My family went crazy over this soup and thought is was so good!

    There were no leftovers after making this soup. It was delicious. I didn’t have garlic powder so I used minced garlic. I will continue to say this with every review, Stacey your recipes are becoming a huge part of our household. Haven’t come across a recipe we don’t love.

  6. I am making this today but I can’t find Zoup Chicken Broth. I did find Zoup Chicken Bone Broth, will this work or change the taste too much? Thanks for sharing your recipes!

    Stacey – this easy Broccoli Cheddar Soup recipe is wonderful! My husband said it is the best he has ever had! The half and half is certainly different in a cream soup. Love your easy recipes!

      1. Fresh broccoli will work! Just chop it into small florets and simmer until tender. Whole milk will work, but it might make the soup a little thinner than using the half and half. Let me know how it turns out!

  11. My hubs and I love this soup. I followed the directions exactly, with a couple exceptions. To the onion cooking in the butter I added finely diced carrots. At the last when the cheese was added I also added parmesan cheese. So good. Thanks for an excellent recipe.
