Bacon and Eggs Tater Tot Casserole in white baking dish

The holidays are here and often times that means some overnight company. But have no fear! Regardless if they’re planned guests or folks that drop by last minute, I’ve got the absolute perfect dish to whip up the next morning for breakfast or brunch!

My Bacon and Eggs Tater Tot Casserole is cheesy, crispy, bacony perfection!  It starts and ends with Kiolbassa Smoked Meats’ delicious Dry Cured Hickory Bacon.  It’s a thick-cut, slow-crafted, naturally-smoked bacon that has no water added, so it doesn’t shrink like some other bacon.  It gives this dish the perfect amount of smoky flavor!

Add to it layers of crispy tater tots, scrambled eggs, cheese, and green onions and you’ve got a complete breakfast!  I absolutely love to top this with some salsa and sometimes even a dollop of sour cream.  It really adds some great flavor to the dish.  I just know you and your guests are gonna love this one!  And it’s super easy!

Bacon & Eggs Tater Tot Casserole

Ingredients

  • 1 (1.25-pound) package Kiolbassa Hickory bacon
  • 1 (32-ounce) package frozen Tater Tots
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 green onions, (chopped)
  • 1 (8-ounce) package shredded colby jack cheese
  • salsa for serving

Instructions

  • Cook the bacon until crisp and drain on paper towels. Crumble and set aside.
  • Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray. Line the bottom of the baking dish with the tater tots.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper. Add half of the bacon, half of the green onions, and half of the cheese and stir well. Pour the mixture evenly over the tater tots.
  • Bake uncovered for 45 to 50 minutes or until the eggs are set and the tater tots are heated through. Sprinkle with the remaining half of the bacon, green onions, and cheese. Return the dish to the oven and cook for 3 to 5 minutes or until the cheese has melted. Serve warm topped with salsa.

    We love it! This worked really well. We did 375 for 40 minutes turning it halfway through and adding a few more toppings on the top just for aesthetics, and it worked great. Thank you! Oh, we also had to add some hashbrown patties because we didn’t have enough tots and it worked great, too. 🙂

      I’m honestly not sure, Cathy. I’ve not tested that. It will likely “work”, but I worry about the tots getting soggy and not crisping up with an overnight soak in the eggs like that. Someone else has tried it and can chime in and offer help.

    I love these ingredients. I have a question, the egg mixture was still a bit liquid in the middle of the casserole. I did the recipe as written. Any advice on making sure my eggs are cooked without burning the whole thing?

      Kiolbassa is a brand of bacon. Other brands will work as well.

      It depends on the serving size, but I’d think you could comfortably feed 6 (or more) with this.

    Very good. Made for the first time this morning and just took two bites. A winner. I only had 4 eggs so used egg whites (kind that come in a carton) and it turned out fine. I halved the bacon because I felt the flavor would be overpowering (great for my family’s taste) and topped with pico de gallo. Love that this is versatile and the proportions are spot on.

    Wow!! This was delicious! I’ve made it twice. The first time, I followed your recipe but used mini tater tots and they crisped up nicely. Last night, I added sautéed green pepper and onion, and a mixture of shredded Colby Jack, Mozzarella and Mexican Blend. The regular size tater tots and they didn’t get as crispy, but that was okay with us!!

    Delicious recipe I didn’t have any milk so I improvised and used carnation cinnamon vanilla coffee creamer and I used Canadian bacon no onion and Colby Jack cheese. I did bake tots first in oven until crispy and I also crisped Canadian bacon too and added a tablespoon real maple syrup to the crisped up bacon. I used a dozen eggs and 3/4 cup creamer 8 oz sliced Colby Jack cheese diced and 1 of Canadian bacon diced. Delicious we love it! It’s a keeper!

    I was a little skeptical having never had a ‘hotdish’ and unsure of how a frozen tater tot casserole would go over. But it turned out great!! I replaced the bacon with a two bell peppers and used significantly less cheese, and it was still quite tasty. It was so hearty and easy to make, and this lends itself to so many varieties to experiment with.

      I wouldn’t recommend it as the tater tots get pretty soggy with the eggs. That said, I know of other readers who have and loved it. If you really need to do that, I’d bake it through the night before and reheat the next morning.

      There’s no need to the them, but they will kind of thaw as you prep the dish.

    I gotta say THANK YOU!! for this recipe!! It was not only quick and easy but Very delicious and everyone loved it. I’m iffy about doing recipes i find online because alot of them are complicated and not much flavor in them. But this I’ll give it a 5 star, everyone needs to try this for their family highly guarantee they’ll love it.

    Shouldn’t the tater tots be baked a bit so they are crispy before pouring the egg mixture on? I would think they would be soggy?

      Well, they’re going to get a a little soggy anyway. They are actually par-fried then flash frozen before they are packaged so they’re precooked when you get them. You’re welcome to try it though. 🙂

        My husband makes this and ALWAYS pre-cooks the tater tots in the air fryer. Doing this decreases the cooking time substantially. Also the tater tot’s don’t get soggy. This is the way we will always make a tater tot casserole from now on. If you have an air fryer give it a try. Or just pre-cook them in the oven and see what you think.

        If tater tots are cooked prior, how much shorter for cooking time?

        It won’t really reduce the cook time by much as the other things will need to cook as well.

        I agree with precooking the tots. Then the only thing left to cook is the eggs. And they only need to be cooked to set. Also, rather than putting all the tots on bottom, I put half and add the other half suspended in the top layer. This also increases crispness due to the tops of some of the tots remaining above the surface. The recipe is great. The process can be I’m proved.

      It really depends on the serving size and how hungry your guests are. I would be comfortable feeding about 6 with this – maybe a few more if there was other food on the menu.
