Lima beans are a variety of dried beans, ranging from green to cream colored. Many people call them butter beans, while others call them large limas or dried limas. People are passionate about what they call them, but don't call me late to supper when they are on the menu.
Rinse beans, add ham hock, water, salt, and cook for 20 minutes, reduce heat to simmer, cover tightly, cook for 1 1/2-2 hours, add pepper, salt, and shred the hock.
