Fried corn is a favorite vegetable side, made from fresh corn cut off the cob and fried in butter and bacon grease in a cast iron skillet. It's one of my favorite vegetable sides and I look forward to it each year.

Ingredients

Ears of corn Bacon grease Butter

Place corn in a bowl or pan in the sink and run a sharp knife down the cob to remove the kernels. Scrape starch and "goody" out of remaining kernels for unique texture and flavor.

Heat a skillet over medium heat, add bacon grease and butter, add corn, salt and pepper, reduce heat to medium low, stir frequently, cook for 20-30 minutes, add remaining butter.
