Slow Cooker Creole Beef Stew

Beef stew is one of my favorite comfort foods, made with cheap, inexpensive ingredients. Slow cooking is the perfect method to get that fall-apart tender beef and decadent gravy, but the one disadvantage is that the gravy may not be as thick as you'd like. Fortunately, there is an easy fix for this.

Toss beef with creole seasoning and flour to coat.

Heat oil over medium high heat and brown half of beef.

Spray slow cooker with nonstick cooking spray, add potatoes, carrots, celery, onion, garlic, and bell pepper, pour beef broth and gravy mix, and cook on low for 7-8 hours.
