Easy Caramel Pecan Cheesecake

Ingredients

–  graham crackers crushed  – pecans – butter – cream cheese – light brown sugar –  vanilla extract – eggs – light corn syrup – heavy cream

To prepare a pecan cheesecake, preheat the oven to 350°F and spray a 9-inch springform pan. Combine graham crackers, pecans, and butter for the crust, then press into the pan.

In a mixer, combine softened cream cheese, brown sugar, and vanilla, then add eggs. Pour the filling onto the crust, tap to remove air bubbles, and bake for 40-50 minutes.

Cool in the oven for 1 hour, then refrigerate overnight. For the topping, toast pecans, and in a saucepan, combine butter, brown sugar, corn syrup, and heavy cream. Pour the cooled topping over the cheesecake before serving.
