Melt butter in a medium pan over medium heat. Whisk in flour to create a roux and cook for 2 minutes, whisking constantly.
Gradually add stock, whisking well after each addition. Taste and adjust seasoning. Bring to a boil, then simmer until thick and smooth.
Optional: add chopped cooked giblets, liver, boiled egg, or shredded turkey. Serve immediately over roasted turkey, mashed potatoes, cornbread dressing, etc.
