Ingredients

– eggs – celery – mayo  – creole or spicy brown mustard – pickle relish  – onion powder – salt – pepper  – hot sauce

For easy-to-peel eggs, steam them by adding water to a saucepan, bringing it to a boil, then turning off the heat. Carefully add eggs, cover, and return to a boil, steaming for 12 to 15 minutes.

Place eggs in an ice bath to cool. Peel and chop eggs, then mix with celery, mayo, mustard, relish, onion powder, salt, pepper, and hot sauce in a bowl. Adjust seasoning to taste.

Serve on crackers, sandwiches, etc., and store leftovers in the fridge for up to 3 days.
