In a bowl, mix the brown sugar, rice vinegar, and maple syrup together. Stir until the sugar is dissolved. Place a wire rack on the baking sheet and lightly spray it with nonstick cooking spray. Place strips of bacon in a single layer on the rack.
Remove from oven and brush the top of the bacon with the brown sugar mixture. Return the bacon to the oven and bake another 5 minutes. Repeat every 5 minutes, turning bacon each time and brushing glaze on the top of the bacon strips.
