Chocolate Cherry Pistachio Pecan Cookies

This Chocolate Cherry Pistachio Pecan Cookie recipe combines some of my favorite ingredients into an easy-to-make chewy oatmeal cookie with a sweet and salty kick!

Ingredients

– unsalted butter –  dark brown sugar – egg – vanilla extract – all-purpose flour – quick-cooking oats – dried cherries – pecans – roasted pistachios – semi-sweet chocolate chips

Use a mixer to cream the butter and brown sugar together – about 1 minute. Add the egg and vanilla and mix to combine.

Whisk flour, baking powder, baking soda, and salt in a bowl. Combine dry mixture with butter mixture on low. Add oats, mix. Incorporate cherries, pecans, pistachios, and chocolate chips, mix to combine.

Use a 1/4 cup dry measuring cup to scoop 16-18 equal portions of dough. Roll each into a 2-inch ball, place on baking sheet. Leave 3-inch spacing between balls, press to 1-inch thickness. Sprinkle with flake salt.

Bake 15-18 mins until edges brown but centers remain shiny/wet. Cool on sheet 5 mins, transfer parchment with cookies to wire rack to fully cool. Bake in batches. Store in airtight container.
