Beef Enchilada Crescent Roll-Ups

School is back in session and the search for quick and easy weeknight meals continues. This recipe was inspired by the Peach Dumplings, which are fresh peaches wrapped in canned crescent roll dough and baked in a sugar syrup mixture made with lemon lime soda.

Brown ground beef, add salsa, salt and pepper, and cook on low for 5 minutes or until heated through.

Unroll crescent rolls, add meat mixture, cheese, roll up, and place in baking dish.

Pour enchilada sauce over crescents, sprinkle with leftover meat mixture or filling.

Bake for 25-30 minutes, cool, and serve with toppings.
