Apple Pecan Salad with Apple Cider Vinaigrette

Ingredients

–  Spring mix – EverCrisp Apples – Blue or gorgonzola cheese crumbles – Dried cranberries – Apple cider vinegar – White vinegar – Fresh lime juice – Pineapple juice

To prepare candied pecans, preheat the oven and line a baking sheet. In a skillet, melt butter, brown sugar, salt, and water, then add pecans and cook.

Remove from heat, add cinnamon, spread on the baking sheet, and bake.

For the dressing, whisk together oils, vinegars, juices, honey, salt, pepper, and garlic powder.

For the salad, combine spring mix, apples, blue cheese, candied pecans, and cranberries in a bowl. Drizzle with dressing, toss, and serve.
