In a large bowl, combine flour, salt, and baking soda. Add sugar, oil, eggs, and vanilla, mixing well for at least 1 minute; the batter will be thick. Finally, fold in the apples and pecans.
Spread the batter into the prepared Bundt pan and bake for about 1 hour until it's golden brown and starts pulling away from the pan's edges. Let it cool in the pan for around 10 minutes before turning it over onto a serving plate or platter.
