  • 2 cups self-rising flour
  • 1/3 cup firmly packed brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons melted butter
  • 1 cup milk
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla
  • 2 apples, peeled, cored, and finely chopped (I used Granny Smith)

For the topping:

  • 1/2 cup chopped pecans
  • 1/2 cup firmly packed brown sugar
  • 2 tablespoons melted butter

  • Preheat the oven to 375 °F. Place muffin liners in the wells of a muffin pan (if desired) or spray the muffin pan with nonstick cooking spray. In a medium bowl, whisk together the flour, sugar, and cinnamon. Add the butter, milk, beaten egg, vanilla, and chopped apple. Stir until the ingredients are moistened, but don't over mix. Spoon the mixture into the muffin pan.
  • Make the topping by combining the pecans, brown sugar, and melted butter. Mix with a fork until moistened. Spoon the mixture over the batter. Bake for 20 minutes or until golden brown and a toothpick inserted into the center of a muffin comes out clean.
