Sweet Cornbread Muffins

Ingredients

  • 2/3 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 4 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons vegetable oil
  • 1 egg
  • 1/4 cup milk

Instructions

  • Preheat oven to 400° F. Combine flour, cornmeal, sugar, baking powder, and salt in a medium size bowl. Add oil, egg, and milk. Stir until lumps are gone.
  • Pour into a greased muffin pan and bake for 15 to 20 minutes, or until golden brown on top.
