Potato Pancakes

Often, after the decadence of the holidays, I just want something simple.  And sometimes the most simple things are the best.  This is one of those simple things that is a GREAT way to use up leftover mashed potatoes.  In fact, sometimes, we make extra mashed potatoes just so we can make Potato Pancakes a few days later.  These are great a variety of ways, especially with a little sour cream or with some of my Comeback Sauce.  YUM!  Y’all enjoy!

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: About 12 pancakes

Potato Pancakes

Ingredients

  • 2 cups leftover real mashed potatoes
  • 1 egg
  • 1/4 cup flour
  • 1/2 teaspoon onion powder
  • 1 tablespoon milk

Instructions

In large bowl, combine ingredients well. The batter will be thick.

Cook by dropping about 3 tablespoons of batter onto a greased hot skillet or non-stick pan. Cook about 6 minutes, then flip and press flat. Cook another 6 minutes.

  4. The 1/4 flour you mentioned, would that be 1/4 cup? Just checking before I make these for breakfast. I love potatos, eggs and bacon and this would be great for breakfast. They look like pancakes. Hope mine turns out that good. Thanks for sharing your always delicious recipes. I’ve made many of your recipes and they have never failed me yet. You would think I’m the best cook that ever was with my family and friends. (HeeHee)

  5. My mom use to make something like these, she used bacon grease to fry them in. Which grease would you suggest and how do you feel about frying in bacon grease?

    • I normally used vegetable oil or butter to fry them, but I think bacon grease would be fantastic. I love adding the flavor of bacon to things like this. Great idea!

  6. Except for the onion powder, these are just like my granny used to make. I’ve continued the tradition and it’s funny, no one I know has ever had potato pancakes like these, so every time I make them people are like, these are different.

    Or course, I grew up in CA, but my granny grew up in Oklahoma! :-)

  7. I always made potato pancakes, but I add diced onions, instead of onion powder! I plan on trying the powder the next time. I really enjoy this site for picking up new and fantastic recipes.
