Potato Pancakes

Often, after the decadence of the holidays, I just want something simple.  And sometimes the most simple things are the best.  This is one of those simple things that is a GREAT way to use up leftover mashed potatoes.  In fact, sometimes, we make extra mashed potatoes just so we can make Potato Pancakes a few days later.  These are great a variety of ways, especially with a little sour cream or with some of my Comeback Sauce.  YUM!  Y’all enjoy!

Total Time: 20 minutes

Yield: About 12 pancakes

Potato Pancakes

Ingredients

  • 2 cups leftover real mashed potatoes
  • 1 egg
  • 1/4 cup flour
  • 1/2 teaspoon onion powder
  • 1 tablespoon milk

Instructions

  1. In large bowl, combine ingredients well. The batter will be thick.
  2. Cook by dropping about 3 tablespoons of batter onto a greased hot skillet or non-stick pan. Cook about 6 minutes, then flip and press flat. Cook another 6 minutes.
