Garlic Parmesan Knots

Well, folks… they got me.  My family got me.  With the big birthday coming up I was expecting them to do something (I had heard the undercurrent), but they surprised me by planning a party the weekend before my birthday.  Last Saturday night, we – and by we I mean me, Heather, and Laura – had decided to run into Montgomery to eat at one of our favorite spots.  My parents were going to watch Jack for us as the place isn’t really child friendly, plus he’d have a better time with is Gamma and Papa anyway.  So when Laura gets to the house, she mentions that something is going on downtown.  Now, our little downtown is a historic downtown area that is filled with old buildings that are usually closed before 5 or so and for something to be going on downtown, it’s really a big deal.  Well, we actually have to drive through downtown to get to my parent’s so I mentioned we would check it out.  Well, as we drive into downtown, I notice lots of cars and activity.  As I get farther down the road, I see a large mob of people on the right side  and they start moving into the road.  As I come to a stop in front of this large group of folks, I realize that it’s all my family and friends!  My wife, Mom, and Laura had been planning this shindig for months.  They rented one of the vacant buildings in downtown and put on a Southern celebration to beat the band.  Now, you know I have to talk about the food: They had fried chicken, black eyed peas, collard greens, macaroni and cheese, potato salad, cheese biscuits, cornbread, birthday cake, Derbie pie, ooey gooey butter cake, macaroons, the list goes on and on.  The decorations were beautiful too; they really put a lot of time and effort into doing something special for me.  It was amazing – more than I could have ever imagined.  And the best part, of course, was being surrounded by my family and friends.  I’ll never be able to thank my three gals (Heather, Mom, and Laura) enough for all of their hard work.  It was an amazing night, one that I am sure to not forget anytime soon.

These easy rolls are an absolute favorite at our house.  The last one is ALWAYS fought over.  They’re simple, quick, and cheap… and who doesn’t love all three of those things.  Plus, they are really delicious!

Ingredients

  • 1 – 12 oz tube refrigerated buttermilk biscuits ( I used the Pillsbury Grands! jr Golden Layers – 10 in a tube)
  • 1/4 cup unsalted butter, melted (1/2 stick)
  • 1/2 teaspoon garlic powder
  • 3 tablespoons grated Parmesan
  • 1/2 teaspoon  Italian seasoning
  • 1/8 teaspoon salt

Instructions

  1. Pop open your biscuits and separate them.  (We call them WHOP biscuits at our house because sometimes you have to WHOP them on the counter to get them open.)  Stretch and roll each biscuit in your hands until you have a snake of dough about 8 to 10 inches long.
  2. Tie each piece in a knot and then pinch the two tails together at the bottom.  Place on a greased baking sheet (or one lined with parchment or a Silpat mat) and bake at 400 degrees F for 8 to 10 minutes or until they are golden brown.
  3. While the knots are baking, combine the butter, garlic powder, Parmesan, Italian seasoning, and salt.  (You can use salted butter and eliminated the salt here.)  Mix well.  Spoon mixture over each of the knots as they come out of the oven.
